one light and one dark Mrs E A Mitchell forwarded them to us with the assurances that for years they had pleased the palates of the many who had tasted them Mr and Mrs Robert Allan are pictured follow year since then we re ceive requests to reprint these recipes Someone has misplaced her copy Another tasted the cake during the holiday season last year and wishes to make it herself Again this month when the time of fruit cake baking is at hand we have received addi tional requests for the recipes So here they are not too late we hope for this seasons trying LIGHT FRUIT CAKE separated butter cups fine lbs bleached sultanas wash ed and dried lb citron peel almonds blanched and slivered lb red cherries lb green cherries rings pineapple or small tin Staffords Pineapple sundae topping vanilla cup warm water baking powder cups pastry flour salt Cream butter sugar add the beaten egg vanilla and warm water Sift flour once before measuring Sift three times with salt and baking pow der Flour the fruit add alter nately with flour Add cherries pineapple and lastly add stiffly beaten egg whites Bake in square with wax paper covered with tvo or three layers brown paper Rub top layer with shortening Or in circular tube pan deep and diame ter If latter pan used it is not necessary to line it Bake in moderately slow oven hours DARK FRUIT CAKE lbs butter lbs light brown sugar eggs lbs 1 tsp salt cinnamon cloves I mace lbs currants lbs raisins Yi lb dates fine citron peel cut fine 4 lb almonds blanched and silvered cup grape juice Yi cup strong coffee ounces chocolate Yi cup strawberry jam Cream butler add brown sugar and cream well Add eggs tvo at a time and beat in at this time two tablespoons of flour to prevent curdling Sift flour spices and salt Sprinkle fruit and nuts with some of the flour Melt chocolate add coffee jam and grape juice with fruit and remainder of flour Smooth top of cake and dampen with cold water to form a shiny glace Bake in two large pans or net of three fruit cake pans which have been lined with wax paper covered with two or three layers of paper Rub top layer of paper with shortening in slow oven hours This cake will keep well for at least a year if stored properly Wrap in wax paper and store in crock Campaign Sometime ago we had a phone call from Mrs Arthur Sheridan in connection with the Newmar ket Legions Poppy campaign Mrs
