hf a cedar grove august 25 the floods that raged through the states recently were a long way from cedar grove to every one but the dares bob and marie with the three children and a friend were almost un aware of the disaster until ithey started home from new jersey one northbound highway after another was closed to all traffic and they had a birdseye view interesting but frightening of a large producers who are not all lo cated in the county some live within 50 miles of the pasteuri zation plant the starting point in the marketmilk industry is the farm where the health unit inspector starts his work the farmer who undertakes the pro duction of market milk is con fronted with many serious pro blems first of all he must be able to obtain a fair return for the use of his capital and labor this involves the difficult pro blems of maintaining a healthy herd breeding and raising or purchasing cows with sufficient milk producing capacity to make possible economical milk production finally his prod uct must he marketed to the best advantage the milk pro ducer is confronted with still other exceedingly important questions such as that of main taining conditions on the farm which will make possible a safe clean product acceptable to the consumer and the control official a clean healthy cow is a prime requisite for safe milk all milkproducing cows should be free from diseases such as tuberculosis brucellosis masti tis or garget actinomycosis or lumpy jaw etc whenever the udder of a cow is inflamed or swollen as it is when the an imal is affected with mastitis or garget and the milk is ab normal such milk should be discarded the animal isolated and a veterinarian consulted in other words whenever a cow is suffering from some dis ease or infection there is a possibility that diseaseproduc ing bacteria may find their way into milk and responsible for serious infections in child ren or adults who consume the milk when the cow is clean the purity of the milk is en hanced as well as its keeping quality it is very good practice to keep the udder and rear quarters clipped and to wipe them off with a damp cloth jut before milking clean itarn important the cleanliness of barns is of vital importance floors ana gutters should be of impervious jnaterial such as concrete and sloped sufficiently to ensure prompt drainage walls and cei lings should be of tight con struction so they may be kept clean a generous supply of clean bedding is a prime requis ite the practice of whitewash ing is essential but not over dried manure and dirt white wash is of inestimable value in dairybarn sanitation proper ventilation in the barn is es sentia and lighting of which there can never be too much is of great importance the milking machine has found its way into dairying more extensively each year but it must be kept clean it is a labor saver but a definite handicap to some producers who think it doesnt have to be cleaned the parts of the milk ing machirie which come into contact with the milk must be kept scrupulously clean special care must be exercised to main tain them in a good sanitary condition they should be rins ed washed and sterilized twice a day the latter may be accomplished most satisfactor ily by means of hot water over 180 degrees f the rubber hose and teat cups may be stored be tween mitkings on a socalled solution rack where they may be exposed to a chlorine or lye solution which will retard bac terial growth anyone intimately connected with the production or handl ing of milk should be in good health and be clean in his hab its the location of the- milk- house where the raw milk is chilled and stored is very im portant the factors which de termine the location are 1 availability of water 2 transportation of milk from the barn 3 drainage milk must be cooled as soon as possible after milking in or der to check the growth of the organisms present and main tain the keeping quality of the milk the milk may be cooled and stored by many means such a running water still un- iced water ice or artificial re frigeration and by bulk storage tanks the last two are the most efficient to effectively control contamination of dairy farm utensils three steps are essential no one of which may be neglected 1 thoroughly wash to re move all traces of milk diet fat etc 2 special sterilizing treat ment to remove or destroy bac teria 3 thoroughly dry after ster ilization except when utensils are to be used at once a sample of each producers milk is taken monthly and is sent to the laboratory where it is tested the resazurin test is used to determine the keeping quality of the milk it is graded 1 2 3 4 and if a producer has three unsatisfactory tests of grades 3 and 1 in a row he is shut off from shipping until he receives a satisfactory grade i or 2 the producers author ity to ship milk depends upon the results of his tests so a good quality milk must be ship ped at all times milk second towater the milk supply often is rat ed as second only to the water supply as a factor concerned with the health of the munici pality ah milk must be pas teurized bafore it is sold for human consumption pasteurization permits the handling of large volumes of milk in plants 3nd has the ad vantage of reducing the trans mission of diseaseproducing bacteria diminishing infant mortality and improving the keeping quality of milk pas teurization is not intended to cover up faulty methods of production or handling of milk bather it is primarily a health measure to make good milk safer foe human consumption the modern milk plant is housed in a permanent well- constructed building that is dur able and constructed to facili tate the sanitary and prompt handling of milk permit a mum the milk distributor must have a permit or license to sell his product to obtain this the product sold and the conditions under which it is produced and handled must conform to the re quirements of the regulations this permit or license is grant ed upon the sanitary conditions of the premises used in produc ing and handling milk and up on the actual condition of the milk as offered for sale to the consumer in addition to the sanitary in spection of these milk plants samples of the bottled milk are taken at frequent intervals and analyzed and tested at the lab oratory these samples are test ed to see if the milk has been pasteurized to check the butter fat content the bacterial plate count and the adulteration of the milk if the bottled product does not conform to the regula tions the permit or license of the distributor may be
