is no 1 no 2 or no 3 grade for some time the product of hutter factories known as solids lias been graded by gov ernment regulation and now all butter is to be inspected aud graded the united farmers of ontario who control seven creameries and the largest butter factory in the province state that there will be a greater difference between grades 1 aud 2 with more pronounced fluctuations and differences in price at present no 1 quality sells at 24 12 cents no 2 about 23 12 cents and no 3 about is to 20 cents there will be it is expected- by butter dealers a greater use of the lower grade of butter on account of tho price in other provinces how ever where grading of butter has tieen in force for two or three years the experience has been that there has been an increase in the con sumption of no 1 grade and no per ceptible decline in the consumption of j he lower grades it is anticipated that more atten tion will be paid to- the grading ot cream at the creameries and that farmers will he induced to produce only tho best of cream under the best conditions in order to get the maximum price at the ufo creameries it is stated that 9 2 per cent of tho cream is graded no 1 for the grading of butter under the ontario standard there is a score card of 100 points divided flavor 45 texture 15 absorption of mois ture 10 color 10 salt 10 and pack ing 10 there may be difficulty when the inspectors start out for instance he may find the butter at stouffville creamery no 1 grade but a few- days later in some retail store he picks up the same prints when tliev grade no 2 or 3 by reason of bad storage facilities in the merchants place of business how an inspector will determine who is responsible for a low grade the creamery or store keeper will be a problem to
