Studor The following are the results of the Mercantile Loague played on Mcnday evening:â€" Without minimizing its food value, one is forced to admit that milk can be the most pctent disease producing med‘ium that is commonly found on the list of human foods. For years the lwdblem of endorsing its use without ninimizing the hazard confronted all nealth workers.â€" Today no such proâ€" _blem exists. Pasteurization properly carried out will render clean milk safe for human consumption, without affectâ€" ‘ng its food value. This statement is not open to criticism, despite the arguâ€" ments advanced by the opponents of this measure. None o0f the essential ingredients in milk are adversely affectâ€" ed by the heating process. The desâ€" truction of vitamin C has been referâ€" red to but milk, whether raw or pasâ€" teurized, is not a reliable source of either vitamins C and D and never has been. Provision must be made for the additionâ€"of both of these to the diet of the child whether raw or pasteurized milk is used. ® Bowling Results of Mercantile League Bucovetskys Win from Nationals and Pierces Win from Venetians in Monday Night‘s Matches. It is easy to justify the claims made for its use. The milk solids in one quart contain more of the: necessary ingredients in a wellâ€"balanced diet than an equivalent amount of any other food.: Fats, carbcohydrate and protein are presentâ€"all in a readily digestible form. . Purther, it is our best source or calcium â€"and phosphorus; and certain vitamins, particularly vitamins A and B,sare found in desirable quantities. It must be remembered, however, that it is not reliable source of vitamins C and D, and that while high in cerâ€" tain mineral salts, it is low in iron. Unlike most animal foods it is conâ€" sumed uncooked. Reference is constanly being made to the food value o# cow‘s milk. Not only is it often used as a substitute for human milk in the feeding of inâ€" fants, but it forms an essential part of the diet of young children. Its conâ€" sumption by adults is further desirable, particularly by those who are below normal health, and it is considered by ll as a necessary addition to tea, cofâ€" fee, cereals and other commonly conâ€" sumed foods. . Its use in the production of butter and cheese needs no comment. As noted in The Advance some week ago the Canadian Social Hygiene Coun cil is carrying on a special campaign t have the pasteurization of milk mad: compulsory throughout Ontario as : means of aiding in the safeguarding o the public health. Popular approva has been given in this immediate disâ€" trict to the pasteurization of milk bu the question is one that is worthy 0o: public attention at all times, so tha regulations may be continued for a ful supply of pure milk. Below will be found an interesting article by Dr. Gorâ€" don Bates, Toronto, well known here Dr. Bates is the general director of the Canadian Sccial Hygiene Council. writes as follows:â€" Pasteurized Milk Has Special Value T‘ctals Milk Accepted for Food Value, but There is Danger of Disease in Milk Not Pasteurized.
