CHOCOLATE CHARLOTTE (Makes 10 te 12 servings) 3 envelopes unflavored gelatin % cup water 3 «cups instant pasteurized powdered skim milk ¥% cup cocoa % cup sugar ¥% teaspoon salt 3 cups water 3% cups whipped instant pas- teuriezd powdered skim milk* package (3 ounces) lady- fingers, split Flaked coconut Sprinkle gelatine over % cup water to soften. Stir softened gelatine, instant skim milk pow- der, cocoa, sugar and salt into 3 cups water. Cook and stir over low heat until gelatine is dissolved. Chill, stirring occa- sionally, until mixture mounds slightly when dropped from a spoon. Fold chocolate mixture into whipped instant skim milk powder. Line 8-inch springform pan with split ladyfingers. Turn chocolate mixture into Lan. Chill until firm. Remove sides of pan to unmould. Garnish with coconut. *--To whip instant pasteur- ized powdered skim milk: (Makes about 334 cups). Mix % cup instant pasteur- ized powdered skim milk with % cup ice water in bowl. Beat until soft peaks form (3 to 4 minutes). Add 3 t able- spoons lemon juice. Continue beating until stiff peaks form (3 to 4 minutes longer). : ie BUTTERSCOTCH (Makes 8-inch pie) 1 pint vanilla ice cream, softened % cup instant pasteurized powdered skim milk % cup ice water 1 package (3% ounces) instant butterscotch pudding mix 8 inch crumb pie shell Beat together ice cream, in- stant skim milk powder, water and pudding mix until well blended; turn inte prepared crumb shell.
