Minted Roast Leg of Lamb Traditional Fare For Easter From pagan times to the present, roast lamb has been < traditional Easter dish. In many European countries Easter lamb symbolizes thc triumph of good over evil and o! spring and life over the tem- porary death of winter. This Easter, add a new touch to your holiday mea! with this recipe for roast leg of lamb. MINT GLAZED ROAST LAMB to 6 lb. leg of lamb | teasgoon rosemary. 1% teaspoon salt 14 teaspoon pepper % cup mint jelly ¥% cup firmly packed, brown sugar or 8 medium potatoes, peeled Roasting time is based on temperature of the lamb when it is taken from the refrigera- tor, completely thawed. Wipe the meat with a clean, damp cloth; make several slits in the top fat; sprinkle with rosemary and rub into the cut surface; place fat side up; ona rack in shallow roasting pan. Do not cover or add liquid, Insert meat thermometer, if be- ing used, in centre of roast so that tip is not touching fat or bone. Roast until thermometer registers 170 degrees for medi- um or 180 degrees for well done. Allow 22 to 30 minutes per pound. Sprinkle roast with 'salt and pepper about half way through roasting time, Ps 1 spread this glaze with leftovers. Serve with Fran- 'onia potatoes, steamed car- rots, green beans and mush- -ooms. FRANCONIA POTATOES One and a half hours before the end of the roasting time for the meat, place potatoes in roasting pan around 'lamb. Sprinkle with salt and pepper. Turn occasionally to brown on all sides.
