@ THE OSHAWA TIMES, Soturdey, March 14, 1964 THE RECIPE for this hand- some Irish Soda Bread is based on the authentic version that originated in Kilkenny. A Tea-Time Treat For Tuesday; ; Old-Fashioned Irish Soda Bread ': Almost considered a_ staple at tea-time in Ireland, soda bread has gained fame and popularity abroad. Traditionally, this quickbread| is flavored with raisins and car-| away seeds and has a cross cut} into the top before baking. Our version is true to form and flavor of the authentic Irish Soda Bread, but lighter-textured due to the use of baking powder which helps alleviate the heavi- ness often found in the original. It's tender and moist, just slightly, sweet, with a fairly compact texture. It slices very well. Wrapped in fyoil or plastic and stored in the bread box, it; keeps several days -- if it's well'g9 minutes, or until well-brown- hidden! ; Customarily, Irish Soda Bread is served plain with butter as a snack or dessert accompaniment to hot, strong tea. However, you'll find that it's also de- licious when toasted and spread with honey or jam. | Irish Soda Bread will add a table on St. Patrick's Day- as well as being a simple-to-bake:-- treat for less celebrated occa-; sions, IRISH SODA BREAD (Yield) One loaf, approx. 8-inches diameter 3% cups once-sifted all-purpose flour Y cup granulated sugar 1 teaspoon salt 2 teaspoons baking powder ¥Y% cup chilled margarine or | butter 2 cups dark seedless raisins,| 1 1-3 cups buttermilk 1 egg ; 1 teaspoon baking soda | Preheat oven to 375 degrees F.| (moderately hot).
