The secret of the new fast method is the use of scalded milk in the custard mixture;, and in pre-warming custard cups before the custard goes into the oven; and in using very hot water in the water- bath. The result of this proce- dure is to cut baking time in half -- and with no loss of deli- cacy in the finished custard.
