There are many things that can be made this month and stored for holiday serving-Heading the list is, of course, the Christmas cake. This month there is a very special Christmas cake recipe provided by Mrs. Elsie Clay Rogers who is well known to so many Ontario women. Whether she is conducting a cooking school in Sarnia, Sudbury, Guelph or any of a dozen other Ontario centres, her skill and knowledge have been the envy of her listeners. Mrs. Rogers is especially pleased with this recipe as it calls for such a small amount of butter and no eggs. For Sour Cream Christmas Cake use; cups brown sugar, 1 tbsp. butter cup cold, strong coffee cups sour cream, 1 tsp. soda cups flour, 1 teaspoon vanilla tsp. each of cloves, cinnamon and nutmeg tsp. salt, 1 lb. currants Ibs. raisins, 1 lb. dates lb mixed peel, % lb. candied pineapple small bottles maraschino cherries, one red and one green * 14 lb. blanched almonds. Cream butter with brown sugar, add coffee and sour cream. Before sifting flour add the soda, cloves, cinnamon, nutrneg and salt. Sprinkle some flour over the chopped fruit, add the rest to the brown sugar-sour cream mixture, adding 1 tsp. vanilla and 1 tsp. almond flavouring. Then stir in the fruit. Bake in greased and floured tins, lined with foil, at 325 degrees until done, about 1% hours depending on size of pans used. NE more recipe provided by Mrs. Rogers: It is Fruited Christmas Tree Bread and calls for: % cup raisins, % cup candied cherries 14 cup citron, 1/3 cup sugar PKA LP KALAP ALEK ELLIS SLATES ILA PE ATWATER 1/3 cup boiling water, 2 cups flour tbsp. lemon juice, 24% tsps. baking powder tsp. salt, 3 tbsps. sugar tbsps. shcrtening, 1 tsp grated lemon rind egg, 1/3 cup light cream To make the filling combine the chopped raisins, cherries, citron, 1/3 cup sugar, boling water and lemon juice. Cook and stir over heat until sugar is melted and mixture is well blended. Cool. To make the dough, measure sifted flour, add baking powder, salt and 3 tbsps. sugar and sift. Cut in shortening. Add lemon rind. Combine egg and cream. Add to flour mixture sitrring only until soft dough is formed. Turn out on lightly floured board and knead about % minute. Tc make the tree, divide the dough in half. Roll 2acn half into a triangular tree-shaped piece, 1/3 inch chick. Trim off narrow strip from base of each triangle and cut each strip in half. Place one of the triangles on greased baking sheet. Fasten two of the strips at bottom to form a tree runk. Spread the filling evenly over entire tree. Moisten edges. Arrange second triangle and remaining two strips on top, press edges together. Cut 4 or 5 slits on each side of tree. Twist tips upward to resemble branches. The filling will show. Bake at 400 degrees for 20 minutes. OR a very special, yet easily prepared dessert, Christmas Candle Cream is both decorative and tasty. Serve it after a special dinner or to dress up simple refreshments. « 1 cup milk, 1 envelope unflavored gelatine 1/8 tsp. salt, 2 egg whites 1% cup sugar, 1 cup cream 1 tsp. rum flavouring, % cup candied cherries % cup candied citron, 4 cup candied pineapple 'red and green maras- chino cherries.
