Cakes SMACK CAKE 1% cups flour 1 tsp. baking powder 1 tsp. vanilla 2 egg yolks 14 cup margarine (or butter) 14 cup white sugar TOPPING 1 cup brown sugar 1 cup coconut 2 egg whites Cream butter. Add sugar, egg yolks and vanilla. Mix well and add dry ingredients. Mix thor- oughly. Press into greased 9 x 9 pan. Topping: Beat egg whites stiff, add brown sugar, then coconut. Pour on top. APPLESAUCE CAKE 2 cups sifted cake flour 1 tsp. baking soda 34 tsp. salt 34 tsp. cinnamon 14 'sp. cloves 14 cup shortening 1 cup brown sugar (firmly packed) 1 egg 1 cup sweetened applesauce 11% tsp. grated lemon rind 3 tbsp. vinegar 1 cup seedless raisins Sift flour, baking soda, salt and spices together. Cream shortening until soft and smooth. Add sugar gradually until light and fluffy. Add egg and beat until very light. Com- bine applesauce, lemon rind and vinegar and add alternate- ly with dry ingredients, . beat- ing well after each addition. Stir in raisins. Turn into greas- ed 8 x 8 x 2 inch pan. BURNT SUGAR CAKE 142 cup white sugar 15 cup boiling water 2/3 cup butter or margarine cup white sugar tsp. vanilla eggs, separated cups flour sifted tsp. baking powder tsp. salt cup milk Heat 14 cup white sugar slow- ly stirring constantly. When it is melted and begins to smoke add boiling water slowly, stirr- ing constantly. Continue cook- ing until syrup measures half cup. Cool. Cream butter, add sugar gradually, then egg yolks one at a time. Beat well. Stir in cold syrup. Add sifted dry in- gredients alternately with the milk. Beat egg whites stiff but not dry. Fold in. Pour into three layer cake tins and bake 30 minutes or until done. Oven temperature 350 degrees. When cool ice with the following icing for burnt sugar cake: 2 tbsps. butter one-third cup heavy cream two-thirds cup brown sugar well packed 15 tsp. salt tsp. vanilla 3 cups icing sugar, approx. Mix butter, cream, - brown sugar and salt. Bring to a boil stirring constantly. Remove from heat, add vanilla. Gradual- ly add icing sugar until spread- ing thickness.
