Home- made strawberry preserves served with hot breads can make the most blustery day just a bit brighter. Strawberries, once a delicacy for a few short weeks each year, can now be enjoyed all year long. Just hull, wash and put in containers in the freezer. It is a matter of personal choice whether or not sugar is added before freezing or at serving time. For preserved strawberries a good method is 3 cups of berries placed in a large pan and covered with 3 cups of sugar. Do not stir. Place over low heat and cook until the juice is extracted, then increase heat and boil rapidly for 25 minutes. Remove from heat and let stand for 24 hours, stirring occasionally, then pour into jars and seal. Strawberry Delight lives up to its name: 2% cups crushed strawberries 3 pounds sugar 11/3 cups water 1 teaspoon powdered alum Boil water and sugar for 5 minutes, add berries ~and boil for 5 minutes. Add powdered alum and re- move from heat. Pour into jars and seal. Strawberry Marmalade is deliciously different: 2 gts. strawberries 1 fresh pineapple 2 oranges, or 1 orange and 1 lemon 6 cups sugar. Wash berries. Peel pineapple and cut into small pieces. Squeeze juice from oranges or orange and lemon, and grind the rind of one orange. Mix fruit together and bring to a boil. Add sugar and cook until clear and syrup. is thick.
