The cheese covering is browned and still bubbling, but not half as much as eaters will bubble with pleasure, after eating a marvelous- IY appealing rice and shrimp main INGREDIENTS 3 cup butter or margarine (1 stick) % cup minced onion ¥% cup diced. celery 6 'tablespoons flour 1% teaspoon salt 1 teaspoon curry powder 3 cups milk (or nonfat dry milk '_ solids; see directions below) 1% pounds raw shrimp (or cook- ed shrimp may be used) 1 cup grated American cheese 4 cups hot cooked rice PREPARING THE FLUFFY WHITE RICE To make 6 liberal cups of fluffy rice, put 2 cups of uncooked rice, 4 cups of cold water and 2 tea- spoons of salt into a 2-quart sauce- pan and bring to a vigorous boil. Turn the heat as low as possible. Cover the sauce-pan with a lid. Do not remove lid nor stir rice while it is cooking. Leave sauce- pan over this low heat for 14 min- utes. After the rice has cooked, remove saucepan from heat -- but keep the lid on until the rice is to be served. Use exact measurements of un- cooked rice and water. Time the cooking accurately. For real convenience and econ- used rice in the refrigerator in a covered container at all times. Use it for many quick, delicious and inexpensive soups, salads, casser- de dishes, hot breads and des- rts. METHOD » df raw shrimp are used, shell, | then remove vein which runs doyn | the centre of the back. This'is done easily by holding the shrimp between thumb and fingers, and running a small knife along the vein, starting at the tail of the shrimp and continuing to the head. This quickly pulls and removes the vein from the shrimp. Cool in boiling water about 10 minutes. Over a low heat, in a saucepan, melt butter or margarine. Add the onion and celery and cook until the onion is tender and a yellowish color. Stir occasionally. Blend in the flour, salt and curry powder. Gradually add the milk, sisting constantly. Cook until thickened, stirring constantly. Cut the shrmp into bite size pieces. Add to the sauce and heat thoroughly. Place the rice in a shallow greased oven- . proof baking dish or on a large oven-proof platter. Pour the shrimp mixture over the rice. Sprinkle with the cheese. Place under the broiler to melt and brown the cheese. If nonfat dry milk solids are used, add % cup nonfat dry milk solids to the onion and Seley wiz. ture at the same time the is added.
