Conversa- Jon at social gatherings, over the sounter, on the phone--everywhere --begins, "Have you seen her?" Everyone wants a glimpse of Princess Elizabeth. We admire Her Royal Highness because she is so wholesome and so charming. Being well versed in world affairs yet a typical young mother, Princess Elizabeth sets an ideal example. As the movie cameras were being reeled we began thinking of the pictorial story as it would be re- viewed at home with the King and Queen, We, too, shall await a close view on the screen of our Princess whose peaches<and-cream complex- ion and genuine smile have been the envy of all. * Speaking of peaches, we hcpe the photographers will take pictures of the luscious Ontario fruits and vegetables, Now if you were for- tunate enough to be entertaining the Princess and her husband what would you prepare? We believe something simple and typically Canadian would be enjoyed mere than elaborate fare. We can think of an attractive fruit salad with fresh blueberry muffins and a des- sert of whole wheat waffles with maple syrup; lake trout fried in butter with a tossed green salad and a dessert of apple pie with old cheese; a colourful hot vegetable plate, rolls with lots of butter, and a delicious ice cream sundae for dessert. The beverage may be tea or ooffee but it should be fresh and piping hot. Evidently the Royal family have no preference since they have been rationed to a limit- ed amount. TEA 1. There are three kinds of tea: Black (leaves that are fermented, heated and dried), Green (not fer- mented), and Oolong: (from For- mosa). 2. Orange Fekoe refers to the size of tea leaf. Pekoe indicates a larger leaf than orange pekoe. 3. Tea bags can be purchased in 1 or 2 cup packages which provide exact measurement. Bulk tea is a little less expensive. 4. Tea loses flavour if it is not | kept airtight. One pound should yield 150, to 200 cups. 5. To make a good cup of tea use a spotlessly clean teapot. Heat the teapot by filling with boiling water for a few minutes. Then pour out water and add measured tea, 1 tea- spoon for each cup. Add freshly boiled water and let the tea steep 3 to 5 minutes, Strain tea into an- other heated pot or into cups. COFFEE 1. Coffee 1s a blend of roasted beans. (These beans are grown in different countries) Most people buy either drip or regular grind de- pending on their type of coffee maker. Use drip for vacuum makers and dripolators and regular for percolators and coffee jugs. 2. We can also buy dry coffee concentrate and frozen coffee con- centrate both of which have been favorably accepted. Use these mix- tures according to the directions on the bottles. 3. A coffee maker should be thor- oughly clean. (Stains in the cof- fee pot can ruin the taste.) 4. Use a measured quantity of freshly boiled water in the coffee maker. Use enough coffee for the desired - strength. For medium strength use 2 "measuring" table- spoons for each cup of water. Let it "perk" from 3'to 5 minutes -- no longer. By the way, never let a cloth filter become dry and never wash it with soap--these are two reasons: why coffee does not "go down". Coffee may also stay in the upper bow! if it has been brewed too long or if a small amount is be- ing made in a large bowl BLUEBERRY MUFFINS 2 cups sifted flour % cup sugar 3 asps. baking powder 1, tsp. salt 14" cup shortening 1 egg 1 cup milk 1 cup fresh blueberries Sift dry ingredients together. Add a mixture of the shortening, beat- en egg and milk, stirring until the dry flour disappears. Fold in blue- berries. Fill greased muffin 'pans 3; full. Bake in a preheated elec- tric oven of 400 degrees for 20 to 25 minutes. Makes 12 medium muf- fins. > * » Anne Allan invites you to write to her c/o this paper. The Experts Say By KAY REX Canadian Press Staff Writer The Irish must have had the right idea they emigrated when they couldn't get enough potatoes to eat at home. Now the Canadian Fruit Whole- salers Association comes up with what could be interpreted as an explanation for Ireland's historic dependence on spuds--the tuber is an "energy food," says the CFWA. More than just starch and water, it contains protein, minerals and vi- tamins. Finally, if mother thinks cutting potatoes out of her diet means cutting down on her weight--she had better think again. Health department officials say that 100 calories of potatoes are no more fattening that 100 calories of anything else. In fact, a slice of bread 'contains about the same caloric content as a medium-sized baked or boiled potato. Last night's mashed potatoes al- ways can be turned into tonight's potato cheese puff. Iggredients: One cup grated cheese; two cups mashed potatoes; two egg yolks; one-third cup milk; two tablespoons melted fat; one- half teaspoon salt; one-quarter tea- spoon pepper; one-eighth teaspoon mustard; two egg whites. Method: Mix grated cheese thoroughly with potato. Beat egg yolks until thick and lemon color- ed and combine with milk, lemon, fat, salt, pepper and mustard. Add to the potato mixture and beat un- til smooth. Fold in stiffly beaten egg whites. Turn into a well-greas- ed baking dish, set in a pan of hot water and oven-poach in a moderate oven (350 degrees fah- renheit) pntil set, about 40 min- utes. Yield: Five to six servings. CHEESE BITS The Dominion Department of Agriculture is anxious to see that more persons become aware of the many and varied uses of Canadian cheese. In fact it has published any number of cheese recipes to coax housewives to use more cheese in their. cooking. For instance---cheese and onion soup: . Ingredients: Three tablespoons ~ OF INTEREST butter; '1 3% cups thinly sliced onion; two tablespoons flour; one teaspoon salt; dash of pepper; five cups milk; one cup grated cheese. Melt butter, add sliced onions and cook covered over low heat, stirring occasionally until clear (about five minutes). Place over hot water, blend in flour, salt and pepper. Add milk slowly and cook, stirring constantly until thickened. Continue cooking about five min- utes. Add cheese and stir until melted. Garnish with chopped TO OMEN + Shiki A parsley before serving. Yield: Six servings. A friend of odrs who is a particu- larly good cook says she always uses a fork when making scrambled eggs. She claims that whipping the mixture around with a fork instead of a spoon makes the eggs much lighter. British Women Will 'Cast the Die' In General Election By MICHAEL NEWMARCH London (AP) -- Several hundred middle-aged men are desperately wooing more than 17,000,000 En- glishwomen. . It's votes they want, not kisses. Women outnumber their menfolk in almost every British constitu- ency. Most of the 'floating voters" tions--are supposed to be women. + So it's the women.who are ex- pected to decide in the Oct. 25 elec- tion whether Britain has a third try at socialism or hands over the helm to Winston Churchill and the Tories. The housewives and shopgirls have pecome the 'most powerful political force of the country. Labor party chairman Alice Ba- con began courting the housewives in the first words of the socialists' election campaign -- her opening --without definite political connec- address to the Labor rally at Scarborough: "Never underestimate the im- portance of women. . .the result of this election is in the hands of women." The Conservative party is direct- ing much of its propaganda to- wards the housewife. It has asked candidates' wives to go into the homes and shopping centres to add the feminine touch to the cam- paign.
