When appetites are faint, when it's "just too hot to eat," the sight of a plate of fresh fruit on crisp greens with a well-blended dressing stimulates the food interest of the whole family. Fruits take to tart or sweet gar- nishes: a light sprinkling of shred- ! ripe | olives, a mound of cottage cheese, | cream cheese balls rolled in crush- | ed nuts, pitted dates, raisins, whole | cluster of ded cocoanut, a or shredded mint leaves. Dressings point up the flavour of fresh fruits, add a tang to the natural sweetness. A tart French dressing is a happy combination with oranges, grapefruit, pears, grapes, pineapple, or berries. It may be possible to save enough milk for the morning coffee by put- ting the bottle in a sauce-pan of cold water over night. However -- to play it safe -- it's a good idea to keep a supply of con- densed milk on hand. In any case milk should be taken into the house as soon after deliv- ery as possible and the bottle and cap should be washed in cold run- ning water before opening or put- ting away. The milk also should be kept cov- ered as it readily absorbs odors from other foods and it should be returned to the ice-box as soon as the mount needed has been re- moved. Fruits such as berries, -cherries and plums should be placed on the ice without washing and as soon as received from the market. Fresh uncooked meat should be removed immediately from the wrapping paper, wiped with g damp cloth, placed on a platter, then covered with waxed paper. If the meat is left in the wrap- ping paper it quickly becomes dark. Eggs should be stored in the ice- box in a wire basket. To keep whites after eggs have been brok- en and separated, place them in a glass jar, cover, and keep cool. Egg yolks should be covered with water or milk and placed in a cov- ered jar. The tendency of lettuce to brown at the edges may be reduced by keeping 1t wrapped in a damp tow- el until used. New: throw out sour milk at it ga be mighty useful in making tea- iscuits and even in cornmeal muf- fins. * Cornmeal muffins -- ingredients: One egg (beaten); one cup sour milk and one-half teaspoon each of soda and salt; one-quarter teaspoon cream of tartar; 1% cups corn meal; two teaspoons hot grease.
