You can do you want with canned salmon and the people who eat at your table will enjoy every mouth- ful, Serve canned salmon in a fluffy souffle, or in a tempting hot ole -- try it in the children's school sandwiches -- or in a salad when that unseasonably warm day polls: around, and spring fever catches hold of you. For a wonder- ful meal, use a versatile and eco- nomical food -- canned salmon. Whether you buy the pink or red selmon, you'll find either one de- licious. Salmon And Corn Souffle 3% 1b..can salmon 2 cups white sauce juice of one lemon 'Worcestershire sauce seasoning 2 egg whites 1 eup canned corn bread crumbs pickle relish Mix salmon, flaked, with thick white sauce. Ad lemon juice and Worcestershire sauce and season. Fold in stiffly beaten egg whites, and pour half of the mixture into a buttered baking dish. Flake salmon, spread half of it in baking dish, sprinkle with salt and pepper, and seatter half of onion rings over top; add remaining salmon and onion rings. Put through hard cooked eggs, olives, sweet pickle, half of salad dressing, chili sauce. Soak plain gelatin in % cup milk for 10 minutes. Heat other % cup milk to boiling point, add gelatin and stir until dissolved. Stir this into salad dressing and combine with salmon. Put into in- dividual moulds wet in cold water. Arrange on lettuce leaves, garnish with pickles and top with salad dréssing thinned with whipping cream, Salad Dressing 1 egg 1 cup sour cream 3% cup sugar 1 tbsp. flour 1 tsp: salt 1 tsp. mustard '3 tsp. paprika 3, cup mild vinegar Beat egg slightly and add sour créam. Mix sugar, flour, salt, mus- tard, paprika and mild vinegar. Have water in the lower part of le boiler hot, then mix egg and cream with vinegar and sea- sonings and cook until thick. Finally, always con- sider an attractive arrangement on a pretty plate. For Sunday dinner, you can be a bit extravagant in your selection of a crisp meringue tart filled with strawberries or tinned pineapple topped with whipped cream. On Monday, the left-over cake from Saturday along with the egg yolks left over from the baking of me- ringues, may be concocted into a tasty dish of Trifle topped with' jelly. Then Tuesday, a Rhubarb Betty, using bits of maraschino cherries in the biscuit crust may be a good coice. Next day, serve rice | pudding, another creamy dessert; this time try adding slivers of can- died ginger in place of raisins. Add milk and cook over boiling water until mixture is thickened, stirring about ten minutes. Beat egg yolks slightly. Add some of the hot mix, then return to double boiler. Cook for three minutes, stirring the while. Cut cake in strips, spread with jelly and arrange in sherbets. Pour in the cooked custard and top each with maraschino cherry. Makes 4 servings. ; JELLY ROLL * 4 eggs . 1 tsp. baking powder 1; tsp. salt % g£up sugar 1 tsp. vanilla 3% cup sifted cake flour 1 cup jelly Mix eggs, baking powder and | salt in a mixing bowl placed over a smaller bowl of hot water. Beat, adding sugar gradually until slight- ly fluffy. Fold in the vanilla and flour. Prepare a shallow jelly roll sheet 15" x 10" x 1" which has been lined with wax paper and greased. Pour on the batter and bake at 400 degrees in electric oven for about 13 minutes. Quickly cut off the crisp edges of the cake and turn from pan on to a towel covered with powdered sugar. Remove paper and quickly sprinkle with sugar, spread with jelly and roll. Wrap in towel to hold shape. CHOCOLATE MINT SAUCE 2 squares unsweetened chocolate 6 tbsps. water 12 cup sugar 15 tsp. salt 3 tbsps. butter 1; tsp. peppermint extract Add chocolate to water and place over electric element turned low until blended. Add sugar and salt, cooking until sugar is dissolved. While stirring constantly, add but- ter and peppermint. Serve hot or cold. Makes 3% cup sauce.
