Before she was married, when she was living with us, she and I used to have many interesting talks to- gether about our observations of various types of table-settings, forms of service, table manners. (These, I quickly add, were always friendly, never critical of each other!) At one of the luncheons I served Napoleons for dessert, and at the. other, meringue shells filled with a delicious cream that is a specialty of mine, Each time I had the maid place a dessert spoon for eating the dessert. A day or so af- ter the last luncheon, my daugh- ter said (with a very gracious ef- fort to be casual, as I now recall!) that it would have been better form if I had provided two, silver pieces with the dessert, a dessert- spoon and a dessert-fork, When I asked her why this was necessary, she replied, "Well, your desserts, the Napoleons and the meringues, were so deliciously crisp that some of the guests didn't have an easy time eating them with only a des- sert-spoon. They had t-~ use the fingers of the left hand as a 'help- er' to the dessert-spoon." Is she right, or am I, Mrs. Beeck- man? I have always served, with any kind of dessert, either a des- sert-spoon or a dessert-fork, but never both. Should I change my ways about this? Isabelle's Mother Yes, your daughter is right . . . and yes, I advise you to follow her excellent suggestion: to have two silver utensils. placed with des- serts, dessert - spoon for the right hand, and dessert-fork as a "help- er" (as your daughter very well expresses it) in the left hand. Or' use the so-called "double silver ser= vice" only with desserts that es- pecially need them: for example, the crisp desserts you named; also short-cakes of all kinds; mixed fruits, especially fruit compotes, since some of the fruits have pits to be removed; tarts, and so forth. With such a dessert as apple sauce, only a spoon is needed; but with the more "consequential" des- serts I mentioned above, it is con- venient to have both spoon and fork to avoid either having to use the fingers of the left hand sto hold the Napoleon down on the plate, for example, or to assist the spoon. Very many hostesses today always provide both spoon and fork with dessert, leaving the use to the guest's preference.
