During the 17th century in England, the day before the lenten period was ob- served as Pancake Day. It is thought that the people wanted to use up what grease, lard and semi- lar forbidden foods they had on hand before Lent--Lent being the forty day period of fasting before ster. As to whether our ancestors used syrup on pancakes or not I cannot say, but maple syrup is what we in Ontario consider our specialty. Other substitutes are mock maple sauce or corn syrup or diced fruit. ¥ waffles or pancakes are served @s a.breakfast treat, honey or mar. malade may be used. As an entree at luncheon, pancakes and sausages well together. on ob lh. 2 eggs, yolks separated, 2 cups sifted all-purpose flour, 2 tsps. bak- ing powder, 1 tbsp. sugar, % tsp. sok, 1% cups milk, 3 tbsps. melted t. Beat egg yolks using high speed of electric mixer. 8ift and measure flour. Sift again with baking pow- _ der, sugar and salt. Turn the beat- er to speed 1 or slow and add dry ingredients alternately with milk. Then add beaten egg whites and melted dripping or butter, and beat at speed 3 for a minute. Bake about 8 minutes in a preheated waffle iron or hot griddle. Brown 5 min- 'utes on one side then turn to brown 3 minutes on other side, Serve im- mediately or stand on end prop- ped up in a casserole or toast stand. Southern Pancakes 1 cup buttermilk, % cup sweet milk, 1 egg, well beaten, 1 tsp. soda, 3% tsp. salt, 1 tbsp, melted fat, 2 thsps. cornmeal, 2 cups flour. Mix ingredients in order given. Bake in electric waffle iron or siz- zling hot greased griddle pan. When bubbles form, turn and brown on other side. Serve with sausages-- or with fruit for dessert. Gingerbread Waffles % cup shortening, % cup boiling water, % cup. molasses, 3% cup su- gar, 1 egg, slightly beaten, 1 cup flour, % tsp. salt,- % tsp. soda, % tsp. baking powder, 1 tsp. ginger, % tsp. cinnamon, % tsp. cloves. Place shortening in a mixing bowl and pour boiling water over it. Add molasses, sugar and egg. Stir in flour, sifted with salt, soda, {dng powder and spices. Cook mixture in hot waffle iron. Serve with syrup or -with cottage cheese. Makes 3 or 4. Rice Griddlecakes: 1 cup flour, 1 tsp. salt, 1% tsps. baking powder, 2 tbsps. butter, 2 eggs, 1 cup milk, 1% cups boiled rice, honey or maple syrup. Mix and sift the flour, salt and baking powder, _ Add the melted butter to the sifntly beaten i yolks and' add the milk and rile. Pour intesthe dry ingredients and mix quickly just enough.to moisten. Britain's Women's Institutes have certainly forged ahead with their rlans. It was only at the end of September that they launched their "Operation Produce" scheme, and now it's. well under way. The idea was--to encourage each member of the W, I. '(Women's In- stitutes) to increase her effort to. wards home food production by at least ten pounds, which would add a total of well over 1,600 tons to Britain's food supplies. There's been a wholehearted nationwide response. One county has reported that all members' chickens have been cull- ed-nonproductive birds are being weeded out and replaced by pullets from well-known breeders. To help individual members, the new birds are being purchased co-operatively, Beekeeping is being considerably increased in another county in Eng- land to help improve on the regu- lar preserve ration in Britain of a pound per person each month. Elsewhere, lists have been made of owners who are willing to hire out implements and equipment suit- able 'for use on small-holdings and community vegetable plots. Names and addresses have also been listed of women prepared to undertake ploughing, fruit-spraying and other energetic tasks. In one county there's a bad at- tack of cabbage blight, so W.
