Adapted to the one dish meal is this special spaghetti dressed with a mellow, well cooked tomato sauce: One fourth cup buttor or oil; 2 medium onions, minced; handful celery leaves or outer stalks; bit of bayleaf; one-fourth teaspoon black pepper; 1 can imported tomato paste; arge can tomatoes; 1 tea- spoon salt; 1 tablespoon brown sugar; 1 pound spaghetti; 1 pound fresh mushrooms or one cup dried ones; 1 pound fresh cooked green peas; , 1 bowl grated Parmesan chees€; cooking time of sauce: 1 to 2 hours at a simmer. This adaptation of spaghetti Is original and naturally, open to dis- cussion. A trial will convince the doubter that here is something very good and different. Buttered cauliflower flowerets, sprinkled lightly with minced parsley and Parmesan may be used instead of the well-sedasoned new buttered peas. The use of a vegetable with the sauce may not be orthodox, but it is good.
