Soda Bread served right from the oven with gobs of butter can be a wel- come treat for the family. For something with a really Irish name and taste, how about Mearog Caise? This dish is comprable to a cheese pud- ding or a souffle, We've con- cocted an easy recipe for Mea- rog Caise using condensed * cheese soup. For a variation the : rest of the year, try cream of mushroom soup. And to begin, your Irish meal, * ther's St. Pattick Soup. Orig- inally, this soup was made with Carrageen Moss, a lovely sea- weed which grows all over the Emerald Isle. Since Canadians might have difficulty in obtain- ing Carrageen Moss, we suggest you substitute spinach in your recipe. St. Patrick's Soup is a com- bination of cream of chicken soup and spinach and for an Irish touch, add shamrock- shaped croutons. IRISH SODA BREAD 2% cups all-purpose flour 1 tsp. baking soda 1 teaspoon baking powder ¥% teaspoon salt 2. tablsepoons sugar ¥% cup butter, margarine or hydrogenated vegetable shortening ¥% cup seedless. raisins 2 teaspoons caraway seeds (optional) 3 tablspoons white vinegar % cup milk milk Heat oven to 375 deg. F. Sift flour with next four ingredients. Cut in butter with two knives or pastry blender unti: mixture re- sembles coarse corn meal. Stir in raisins and caraway seeds Mix together vinegar and milk. Make a well in centre of flour mixture; add liquid all at once, stirring vigorously with a fork until dry ingredients are mois- tened. : Turn out onto a lightly flour- ed board; knead gently 8 to 10 ring constantly, over low tem- perature until mixture bubbles and is thickened, Cool slightly. Gradually stir soup mixture into slightly beaten egg yolks. Beat egg whites until stiff but -not dry; fold in soup mixture. Pour into 1-quart casserole; place in pan of warm water. Bake one can (10% ounces) condensed eream of chicken soup, un- diluted ¥% teaspoon salt dash nutmeg Combine ingredients. Heat to boiling point, stirring occasion- ally.
