Although 1 love to cook, what a treat to not have to for a change! 1 must admit it's much easier to est healthy when 1 do my own menu planning and food preparation. This week's low-fat recipe is one I've used many times. It's a good "make-ahead" dish that you can pre- pare and serve right away, or refrigerate and gently reheat. Enjoy! Beef Stroganoff 1 lb lean boneless beef round steak, about 1/2 inch thiCk 2 tsp vegetable oul 1 medium onion, chopped 1 Clove garliC, Chopped 3 cups sliCed mush- rooms 1/4 Cup dry red wine 2-3 tbsp ComstarCh 1 cup beef broth sait and pepper to taste i cup fat f ree sour cream 3 cups hot COOked noo- dies or noce 1 1/2 tbsp fresh parsley, Chopped Tin any fat from beef. Cut beef with the grain into 2-inCh stnips, then Cut strips diagonally across the grain into 1/4 inChes sliCes. Heât oi1 in large non-stick skillet over medium-high heat. Cook onion and garlic until tender. Stir in beef and mushrooms. Cook about 7 minutes, stirring occa- sionally, until beef is brown. Stir in wine, reduce heat, Cover and sim- mer for 15 minutes. Stir comstarch into beef broth until dissolved, stir into beef mix- ture. Cook over medium-high heat, stirring until thickened. Add sait and pepper to taste. Cover and simmer over medium-low heat about 30 minutes, stirring occasionally, until beef is tender. Stir in sour creamn and heat through. Serve over noodles or nice and sprinkle with parsley.
