the other extreme a filling that is too still is caused lo using too much thickener or thickening agents a pie made from a filling of this sort will hajfe an objectionable filler or thickener taste some processors add ben- zoate of soda as a preservative if an adequate process has been used this should not be necessary far too often the use of this preservative results in a masking iff the fruit flavour and imparts a benzoate taste to the product a basic formula of so per cent fruit 20 per cent cane sugar and 1 to 5 per cent thickener has consistently re suited in an excellent product locust bean gum wavy maize a modified corn starch arrow root starch and minute tapioca used singly and in blends are the most efficient stabilizer tested so far in some instances pie fillers of good consistency have been made without the addition of any thickener this depends however on the con dition of the fruit being used with regard to the effect of storage temperatures on qual ity and consistency tests to date have shown canned apple pie fillings stored at room tem peratures 65 to 72 degrees to be stable for at least nine months xrajlng pigs they are xraying pigs at la- combe experimental station aha and no doubt people will wonder why h is an interest ing story and this is how the research men explain the pro ject at the present time in order to get a picture of the genetic possibilities of a litter of pigs it is necessary to take a repre sentative group from the lit ter generally four pigs two barrows and two gilts selected at random and subject them to a feeding test which culminates in slaughtering the pigs this test gives a record of the group in rate of gain feed efficiency and carcass quality and to gether with litter size and wea ning weight can be used as a basis of selection selection of course is the basis of improve ment the best pigs from the best performing litters must be selected as breeding stock to produce each succeeding gen eration all of these records with the exception of carcass quality can be obtained without slaugh tering any pigs however car cass quality is possibly the most important record of all if we are to produce a higher per centage of lean bacon hogs we must select for and improve this characteristic if we could evaluate accurately the carcass quality of a pig without having to slaughter we would have a much greater number of pigs to select from and consequent ly be able to make a better and faster improvement hence the experimental work in xraying pigs at lacombe a research project is underway to ascertain whether the ba con quality or potentiality of a pig can he determined with out slaughtering it by using xray techniques will have to lie developed and studies made of the relationship of the rela tive fat and lean as measured through xray equipment and the fat and lean as determined by cutting the carcass this will be done with a large num ber of pigs at different stages of growth if a close relation ship can be established and the best stage of growth at which to xray determined then a simple measure of the length of the live pig along with the relative fat and lean from an xray should give a good esti mate of its bacon quality or potential with this information the best pigs in carcass quality could be selected as breeding stock from the best litters from the standpoint of litter size weaning weight rate of growth and feed efficiency these are the factors which determine economy of production this phtise of the work has i just started at lacombe says j g stothart senior animal i husbandman at the station it i will take some time to appraise all the possibilities it is an other example of research how ever which may contribute importantly in the develop ment of genetically better bree ding stock better from the standpoint of overall economy i of production tvedlng the beef csltle in feeding beef caives indi- vidualiy from weaning at six months of age it has been found that bulls gamed most rapidly steers ranked second j ami heifers third the ecc-n- omv of gains was in the same oi ten starting calves r igl n feeding at the fxrvr- taientai station at scott ssk i the practice followed in hioyt cases is to give two pounds of i hay to each pound of grain mix ture for the first few weeks if the hay is not fully consum ed the srai mixture is reduced accordingly and increased la- ter as the calf becomes accus- itoted to the concent ate miring the winter of k354 ony bulls and heifers were fed individually at the scott sta tion the average gain for 7 bull calves ir- 174 days was 236 pounds per head daily and for sever heifers in 230 days 162 pound- the grain require ment per hundred pounds gain was 4w pounds for bulls and j5ji for heifers the hay was gradually reduced m propor tion until the quantity of grain mixture was from three to four pounds to each pound of hay at the end of the feeding test the object in feeding more hay at the beginning s to help prevent the animals from go ing off feed which often hap pens at first unless special pre cautions are taken the object in reducing the proportion of hay as the feeding period ad vances is to get the casf to eat more grain the average daily grain in take reached a maximum of 1t pounds for heifers and is lbs for bulls for the purposes of the test the bulls were fed un til they reached 900 pounds and the heifers sou pounds the average time required to reach these weights was 371 days for bulls and 411 for heifers the animals were hand fed but unless the feeder is experi enced in hand feeding for maxi mum gains and the tune per son feeds every day and at the same hour a more satis factory plan would be to use the self feeder coming soon houstons the
