KITCHEN GOSSIP By EILEEN DIXON Holiday time is busy time for everyone and especially the homemaker with Christmas dinner to prepare But todays busy homemaker will find her lob easier if she serves traditional Christmas turkey for her special dinner This article on Christmas turkey is not for you if buckwhen mas dinner and inviting both sets of inlaws it is back Tie drumsticks also for the woman across the way who is cooking her first Christmas dinner turkey because other years the cost of bird large enough for her growinglfamily just didnt fit her food budget EASY 0N BUDGET She is luckier this year for turkeys are very plenti ful and the price very reasonable This talk about turkey is also for the lady in the next block who never in her life saw frozen evlscerated turkey until she set foot on Canadian soil less than year ago So for all these special people here are some Christmas turkey facts order frozen evlscerated or fresh Canada Grade turkey large enough to allow an average of dull side out tuck ends into pan but leave sides open Remove foil approximately one hour before end of roasting time and baste every 15 minutes with the fat from the pan so that turkey will be golden brown In place of foil turkey may be covered with double layer of cheesecloth dipped in melted fat Cheese cioth may be left on until the end of roasting but if it dries spoon fat from pan over it The
