KITCHEN GOSSIP By EILEEN DIXON EASY ENTERTAINMENT During the holiday season casseroles will be featur ed at many supper party and with good reason These easy going dishes can be prepared in advance dont require watching in the oven and stay hot in their handsome containers until guests are ready for seconds Seafood can be counted on to make elegant party casseroles How would you like one containing husky chunks of tuna and cooked frozen asparagusbaked together in creamy toasted almond sauce Or perhaps tender morsels of crab meat baked in sherryflavored sauce attractively flecked with bits of red pimento and green pepper Recipes for both of these delicacies have been supplied by the home econ omics of Canadas Department of Fisheries COMPANY TUNA BAKE cans ounces each tuna packages ill ounces each frozen asparagus 12 cup chopped blanched almonds cup butter melted 14 cup flour V2 teaspoon salt lg teaspoon pepper few grains nutmeg cups milk tablespoon sherry optional paprika Drain tuna and break into large pieces Cover as paragus with boiling salted water Heat until water returns to boiling point drain Cut asparagus into oneinch pieces Place in greased onequart casser ole Top with the tuna Fry almonds in butter until golden brown Blend in flour and seasonings milk gradualw and cook until thick stirring constant iy Add sherry Pour over tuna and asparagus Sprinkle with paprika Bake in moderate over 350 deg for 25 to 30 minutes Makes six serv ings CRAB CHARLOTTE CASSEROLE cups cooked crab meat 0R cans ounces each 14 cup flour 14 cup butter or margarine cups milk tablespoons minced onion 12 teaspoon celery salt teasopon grated orangerind tablespoon chopped parsley tablespoon minced green pepper pimento finely chopped drops Tabasco sauce tablespoons sherry egg beaten lz cup fresh bread crumbs 12 cup grated cheddar cheese pimento or tomato for garnish Remove any shell or cartilage from crab meat If using canned crab drain Break meat into largr pieces Melt butter blend in flour Add milk grad ually and cook until thick and smooth stirring con stantly Add onion celery salt orange rind parsley green pepper pimiento Tabasco sauce and sherry Stir little of hot sauce into egg add to remaining sauce stirringieonstantly Add crab meat Turn into greased Ilaquart casserole Mix bread crumbs and cheese Sprinkle around top edge of casserole Bake in moderate oven 350 deg for 15 minutes Re move from oven and garnish top with pimiento cutj in shape of poinsettia flower or whirl of thinly out tomato wedges Place under broiler and broil for about minutes to their Achievement Day in Dun troon During the morning mem bers judged two classes wool skirts and woollen materials and answered quiz pertaining to the subject maltcr discussed during this project large audience was on hand in the afternoon to see the girls model skirts and jumpers which they had made during the project In addition to fashion parade the girls pre sented demonstrations and skits
