the outdoors beckoned And since bazaars and bake sales are on the upswing all around the city this month many of us are eager for ideas on this popular theme TRIED AND TRUE First were told successful bazaar baking depends on the use of reliable recipes followed with scrupulous care lhen lets all remember that cakes fancy breads and other bazaar favorites will turn out only as good as the ingredients we put into them Well want to usethe right flour and fresh eggs for instance and of course lots of butter or margar ine so necessary for fine textured baked goods and that characteristic delicate flavor Finally many experienced bazaar cooks have dis covered how convenient are foil pans and other dis posable containersThese turn out mighty handy on baking day and at the bazaar and thanks to them we dont have to recover our favorite pie plate after the bazaar is over With all these suggestions in mind how about few good bazaar recipes We have two dandy ones for you today home tested and suitable for baking in foil pans as well as the more conventional containers Here they are LEMON BUTTER CAKELETTES Instead of one lareg butter cake why not bake several of these small cakelettes for your bazaar Cust omers will find them light and tender with pleasant fresh lemon tang And their size just enough for two should prove mighty popular too Makes Cakelettes cups sifted cake flour teaspoons baking powder 32 teaspoon salt 12 cup soft butter cup sugar teaspoon vanilla teaspoons grated lemon rind eggs cup milk Butter six aluminum foil baking cups about in ches in diameter Preheat oven to 375T Sift together the flour baking powder and salt Cream butter grad ually heat in sugar Beat in vanilla and lemon rind Adr eggs one at time beating in well after each addition Add sifted dry ingredients to creamed mixture altei nately with milk combining lightly after each addition lurn batter into preparedpans Bake in preheated ov en 15 to 20 minutes Cool completely in pans on cakc nck Frost with the following Creamy Lemon Icing Decorate with cocoanut CREAMY LEMON ICING Makes Sufficient Icing for Cakelettes 14 cup soft butter teaspoon vanilla teaspoon grated lemon rind cups sifted icing sugar tablespoons about milk Cream butter beat in vanilla and lemon rind Gradual ly blend in icing sugar Beat in sufficient milk to make an icing of spreading consistency APRICOTALMOND BARS These butterrich fruited bars are composed of two layers tender shortbread base and an apricot almond layer The baked result mmmm chewy but tery and quite colorful In other words an excellent bazaar recipe APRICOTALMOND BARS Makes Dozen Bars cup dried apricots 12 cup soft butter 14 cup granulated sugar cups sifted allpurpose flour eggs cup lightlypacked brown sugar 14 teaspoon baking powder 14 teaspoon salt 12 teaspoon vanilla 12 cup chopped almonds Rinse apricots cover with water in saucepan Bring to the boil and boil gently 10 minutes Drain cool and chop Preheat oven to 325T Cream butter blend in granulated sugar and cup of the flour Divide mix ture in half Press into two foil pans 512 812 inches Bake in preheated oven 20 minutes Meantime beat eggs well gradually beat in brown sugar Stir in the remaining 1A cup flour baking powder and salt Stir in Ivanilla almonds and apricots Spread over baked layer and return to oven Bake until set about 30
