been com pleted as a result definite cooking instructions and stor age time- can now be given to the many canadian families who store their meat in a rome freezer or locker meat and other foods which are to be frozen should always j be properly packagsd in freezer wrappings or in special freezer i containers in order to keep all i the moisture and flavour inside the package and to allow the frozen food to retain its fresh characteristics when foil or plastic freezer wrappings are used they should be covered with an overwrap of brown paper to prevent holes from be ing punctured in them this is not necessary when laminated paper or other such heavy loc- ker papers are used steaks chops and meat pat ties will separate more easily if a folded piece of freezer wra pping or waxed paper has been placed between them freezer carton which are designed for freezing fruits and vegetables may also be ued for storing stew meat minced meat cut lets and cooked leftover meats and gravies whether or not meat is thaw ed before cooking is a matter of time and convenience if it is to be thawed the wrapping should bs left on in order to prevent the evaporation of jui ce from the meat it may be thawed in the refrigerator al lowing nine to ten hours per pound or at room temperature allowing only 2 to 3 hours per pound the time i takes to thaw at room temperature may i be reduced considerably if the package of meat u placed in i front of an electric fan meat that has been thawed complete- ly should not be refrozen and it should always be cooked prom- 1 ptly to prevent spoilage frozen roasts more even cooking is assured roasts that are not thawed before cooking should be cooked uncovered in a moderately slow 325 deg f oven for approximately one and a half times as long as s takes for fresh ones the use of- a meat thermometer is the surest way of determining doneress of roasts cooked this way the thermometer should not be in serted until the roast is at least halfcooked in cooking un- thawed pot roasts the same ex tra time is required that is for example if a fresh roast lakes two hours to cook a fro zen one that has not been thav- ed will lake approximately 3 hours- frozen steaks and chops can be either panfried o- broiled but they are a little more diffi cult to brown if they are not thawed before cooking frozen beef steaks and lamb chops re quire at least twice as much panfrying time as fresh oner frozen pork chops one and a ha times as long and frozen veal chops just five or ten min utes longer than fresh ones frozen steaks or chops to be broiled should be heated in the broiler six or seven inches be low the heating unit until they are thawed this will take 7 or 8 minutes on each side for meat one inch thick and three to four minutes on each side for meat onehalf inch thick then the broiler pan should be raised and the meat cooked in the same way as fresh steaks or chops there are certain time limits for keeping meat in a home freezer or locker large or thick cuts of meat can be held considerably longer in storage than small pieces which tend to dry out and develop offfla vours more quickly like other frozen foods meat must be wrapped in moisture-vapor- proof materials and should be stored at a constant tempera ture of zero deg f here are the maximum storage times for frozen meats as recommended by the consumer section beef roasts not realizing that wet roads and leaves are just as great a haz ard as snow and ice said the spokesman in fact its greater hazard as many drivers who are used to skimming along the highways under the fine summer conditions are totally unaware of the changes that take place in the roads when they become wet they know that ice is slippery and drive accordingly but many forget that a film of water on
