guelph short courses in dairying chicken raising domestic science baking etc are conducted there are about twelve hundred students taking the regu lar and short courses this year of course i am interested in the trent institute which is a baking school for bakers tho sciiool is a building erected especially for thisj purpose and is very complete in all its appointments the installation is of the most modern machinery and equipment known to the baking trade tor carrying out the latest ideas in the manufacture of bread and cakes i registered for the baking coarse on 1st of january 1933 this coarse lasts for four mouths and consists of a thorough scientific as well as the mechanical work that a baker should havo in order to turn out first class bread and cakes it also includes laboratory study of wheat and milling of flour shortening sugar etc this work is carried on in the institute laboratory tho study of yeast which is so important in tho fermentation of bread is made in the bacteriology lab which is very up to date with the most modern appliances for this type of research nearly two months have passed sinco i enrolled and i am pleas ed with tho progress so far when the course ends on april 30 at which time i expect to graduate i hope to have gained a very inten sive scientific knowledge of tho bak ing industry which would not other wise bo obtainable except through
