Happy Cooker _ = There's an entertaining story making the rounds about a TV commercial made for the Pork Marketing Board which features pork chops ina dish called Canadian Redcoat. The commercial was centred on a Mountie--sort of a gourmet gendarme. "Halt!"-- said the CRTC. "You are not allowed to use an RCMP in a commercial." The promo was redesigned, but not the recipe which is reprinted below. Canadian Redcoat looks very pretty on the platter garnished with fresh fruit. It also tastes excellent and here are the instructions: Canadian Redcoat 6 double pork chops, 1% inches thick. Marinade: 142 cups soy sauce 1 cup apple juice % cup water ¥% cup brown sugar 1 tablespoon dark molasses 1.teaspoon salt In a small saucepan mix marinade ingredients. Bring to a boil and cool. Place chops in a deep dish, bone side up. Pour marinade over chops. Let stand in refrigerator overnight, basting occasionally if possible. Wipe marinade from chops With a paper towel and place them in a baking dish, covering it tightly with foil. Bake in 325 degree oven until tender--11% hours. (At this stage, chops may be wrapped and stored in refrigerator or freezer). Meanwhile, combine the red sauce ingredients in heavy saucepan. Red Sauce: 34 cup catsup %4 cup chili sauce % cup apple juice ¥, cup brown sugar % teaspoon salt » . ow Blend together and bring to a boil. Simmer 20 minutes. Dip cooked chops in red sauce and place in baking dish. Bake for 30 minutes in 325 degrees oven until lightly glazed, basting oc- casionally. This makes six servings, and the pork producers suggest you serve it with broccoli, brussel sprouts or buttered cabbage, and pan browned potatoes. Page 22, Wednesday, June 15, 1977
