Happy Cooker Last week's heavy snow left the bread shelves of some supermarkets empty, and I know of at least one homemaker who was thus forced to rediscover the joy of making her own bread. When you finally get it in the oven, the smell is heavenly. And the end product is so good, you'll find the first few batches disappear with the speed of light. White Bread 2 cups hot water 44 cup granulated sugar 4 teaspoons salt 14 cup vegetable oil 1 teaspoon sugar 1 cup lukewarm water 2 envelopes yeast 9 - 9% cups all-purpose flour. In a large mixer bowl, stir together hot water, 1y cup sugar, Salt and oil until sugar is dissolved. Set aside. In a small bowl, dissolve 1 teaspoon sugar in lukewarm water. Add yeast, but do not stir. Let stand for 10 minutes. Stir briskly with a fork. Then stir into lukewarm mixture. Beat in three cups of flour. Beat vigorously by hand, or with an electric mixer. Then gradually beat in remaining flour with a spoon. Add sufficient flour to form a stiff, but moist, dough. Turn dough on a floured surface and knead 8 - 10 minutes. Shape into a smooth ball and place in a greased bow] rotating dough to grease surface. Cover with a damp cloth and let rise until doubled - about 1% hours. Keep in a warm place. A neat trick here is to put a bow! of boiling water in your oven, tuck the rising bread inside, and close the oven door. (Don't turn the oven on!) When it has risen, punch it down and shape into 3loaves. Placein greased 9 x 5 inch loaf pans, cover and let rise again until doubled, about 1 hour. Bake in pre-heated 400 degree oven for 30 - 35 minutes. This makes 3 loaves of very very good bread. } Call Contact 526-9333 Hours 9 a.m. to5 p.m. Monday to Friday (Except Holidays) As January draws to a close one thinks that it has been a bleak month with little sunshine and few days without snow falling. It would be interesting to know . _how many tons of snow has been removed from roofs, driveways and paths. The drivers and runners of Meals-on-Wheels (except for one very bad night) went out regardless of the weather and the recipients were most appreciative when they saw the friendly face and cheery voice of the runner with their meal. Again this year there is a Tax Clinic for people who are on Unemployment Insurance, Old Age Pensions, Welfare and Mothers Allowance. The Clinic is held at St. Paul's United Church and is open from 9 - 5 Monday to Fridays. Please use the East Street entrance, and call beforehand to make an appointment. The number is 526-3951. This Clinic is under the sponsorship of the Y.M.C.A. : I had a visit this past week from Mr. John Steele of the Simcoe County Social Services. Did you know that the Social Services offers a subsidized Day Care Program, whereby working mothers or students with a low income can be provided with assistance with the cost for day care for their children? Also Mr. Steele has _ asked me to inquire about ladies who are interested in providing an approved private home for day care facilities. If you are interested in either of these phases of day care help, please direct all inquiries to Simcoe County Social Services by calling 526-2261 ext. 233. The Big Brother Association is to be congratulated on their blitz appeal of last week. The Big Brothers offers friendship and guidance to fatherless boys so their appeal was not for funds but for volunteers to come forth and offer their services to be a Big Brother. There is a desperate need for Big Brothers, so its not too late even now to get an application and join a fraternity of friendship. The Midland Directory that the Midland Times published last week is excellent and I am sure it will become a popular handbook for every home. For newcomers to the area it has a complete guide to the services and highlights of the Midland area so a very special thank you to Dagmar Kanzler and her staff for a job well done. We are happy to welcome to our area again the Welcome Wagon and its new representative Mrs. Margaret Douglas. Shirley Wiley of Screening and Matching Committee and Peever Social Committee gave details of a sleigh riding party at Little Lake Park, Midland, followed by a dinner at ~-Freida's restaurant for Big and Little Sister's, during the holiday season. President, Joan Roszman announced the establishment of an Advisory Committee for the Association. Members of the committee are: Don Roszman, Social Worker, Mental Health Centre, Penetanguishene. Rev. Norm _ Watson, Minister St. Paul's United Church, Midland and Dave Gordon, War- minster, Supervisor Children's 'Aid Society Simcoe County. Three members of the Association were guests of Scottie Attridge on Community Talk, Cable 12 Television on January 11. During the half hour program they gave a detailed outline of the aims and ac- complishments of the Big Sister's Association.
