Once upon a time I used to think Canada was a free country. Next thing they will take all hun- ting and fishing books off the book store shelves. The sportsman is not at fault but he is always getting the dirty end of the stick. To some a nice roast of beef serves as a good meal where as many sportsmen feel a nice roast of venison or moose serves as a good meal. The big thing I think is, beef season is open year round whereas deer season maybe two weeks, moose season maybe a month. In no way would any sportsman want a year-round season that is not my point. For the politicians to keep in good graces with some, they sell anything down the drain even a multi-million dollar business whether they realize it or not. I have a migratory bird licence and a small game permit pius a varied assort- ment of other licences for big game which as far as Iam concerned means I have guns and I hunt. So where is the beef, I am registered. If the government would spend more time enforcing existing laws and less time trying to make more problems for the law enforcers they might be doing something constructive, but then that is not the policy of Canadian or Ontario govern- ments that now control the purse string. The taking of fish doesn't seem to bother too Fin, Fur, and Feather many people, maybe I should stick to the fish. I, for one, cannot stand fish that tastes fishy. Most of this taste is usually from improper cleaning. - Just as in beef or poultry fatty parts of the body are of no value. Fish are no different, the belly is usually nothing but fat and this is what stores the fishy taste. On certain fish such as the trout there is a row of fat.on the top of the back which also has to be removed. If you cook fish with the skin on scrape as much of the slime from the fish that is possible. Washing does not take all of the slime off and this also gives the fish a strong taste. There are not too many foods that are better for you (since fish is brain food), especially when it is prepared right. Take all excess fat from the fish, strip the belly fat and you'll find a big dif- ference in the taste. One cooking method that has always been successful is the beer batter. I have yet to taste a bad piece of fish. The fish has to be filleted and all belly fat and back fat removed. Cut into small pieces about one inch in thickness and about two inches in length. Drop into batter consisting of 1 cup flour, 1 egg, 12 teaspoon salt, 1 tsp. baking powder, 1 cup beer (any brand) coat well and drop into a deep fryer for about three minutes and there it is, some of the best tasting fish you'll ever have. There are enough hunters and fishermen that if we voice our opinion the government won't push us around so tell a member of parliament what we think.
