Pres. Mrs. Rita Polkinghorne asked Mrs. Ilene Bell to open the meeting with the devotional period. She read a short story and poem on _ 'Praying Hands", followed by 2 short stories on Saints, each one pertaining to St. Patrick, the patron-saint of Ireland who was born in Scotland. In the absence of the secretary, the office was filled for this meeting by Mrs. Charlotte Gerdes. The minutes of the January meeting were read and approved. Due to the inclement weather in February that meeting was cancelled, but a short emergency meeting was held in the Church on Feb. 15, following the service as a motion was needed to pay the allocation. Mrs. Polkinghorne thanked all the members for helping to make the World Day of Prayer such a success. The correspondence was read amongst which there was a notice announcing there will be a United Church Women's _-- Presbyterial work shop on April 5, in Duntroon Hall in Not- tawasaga. The ten week course was held at Brooklea Golf and Country Club, and ap- preciative students presented Brooklea's Ellen Walker with a sketch of the establish- ment, by John Yankee. Instructor for the course was Carol Ash- worth of the Sportsman's Inn, Victoria Harbour. Under her guidance, students learned correct service procedures and food terminology, bar service, the ingredients of exotic drinks and gour- met foods, menu-making and other subjects relevant to the trade. A special post-graduate field trip took students to the Constellation Inn in Toronto where they learned the fine art of flambe. They also visited Formosa Springs in Barrie, and the Jordan Valley winery. The students varied in age from young to mid- dle-aged, and there were two men in the group. An important aspect of their training was emphasis on Huronia hospitality and good will. Wearing red car- nations, the graduates gathered for a festive luncheon at the Highland Motel and received their Georgian College diplomas from Neville Keefe, Chairman of Community Services. Don MeNee, of Canada Manpower, gave a post- luncheon address and commended the graduates for their diligence and _ their contribution to goodwill in the local tourist industry. Several of the students have moved directly into jobs, and most of them have positions in the food service industry under consideration.
