Boil a few Cabbage rolls Midland's Hanna Thomas is one of the best cooks around, and her recipe for cabbage rolls will fill your kitchen with a delicious fragrance. It's the best way I know to make the little darlings. Ingredients 1 large head of cabbage 1 - 48 ounce can tomato juice 1 clove garlic 11% pounds minced beef 1% cups raw rice 2 tablespoons tomato paste 1 tablespoon lemon juice V4 teaspoon paprika salt and pepper Method: Carve out thick core from centre of cabbage with sharp knife. Drop cabbage into minutes until leaves are softened. While boiling loosen each leaf with a long fork and spoon. Remove each leaf and place in dish to cool. When all leaves have been softened, cut out heavy centre stems from each leaf. Do not stuff outer leaves - save for the bottom of the pan. If leaves are extremely large, cut in half. Set aside while you make the filling. Filling: Boil rice for 5 minutes only. Strain, rinse with cold water and drain again. Place minced beef in a large mixing bowl. Add rice, tomato paste, lemon juice and seasonings. Mix all together, lightly but thoroughly. Fill each leaf, starting at one end with 1 tbsp. stuffing and roll up like a cigar. When all filling has been used up, place all outer leaves and any leaves left over plus stems of cabbage on bottom of roasting pan. This acts as a base to keep cabbage rolls from scorching. Cut garlic in half and hide each half under a leaf at each end of the pan. Arrange cabbage rolls, seam side down, on top of leaves and stems, alternating each layer in opposite directions. Add enough tomato juice to reach top layer. Sprinkle with a little salt. Press down with an inverted china dish. Cover and bake in 300 degree oven for 2 hours. Serve with dairy sour cream. Serves 6-8. This recipe is taken from Hanna's Family Cooking on Less than Five Dollars a Day, which was published in 1973 by Pagurian Press.
