Jello--the old standby --comes alive Last week we were out for dinner at one of those closing banquets with which June is all a-bloom, and were surprised and dowDgast when the desS#rt turned out to be plain jello with a dab of something synthetic on top. While Jell-O is possibly the greatest culinary invention since the discovery .of sliced bread, there is no excuse for. serving it unadorned - not at a faney Dan restaurant. Not even at home need Jell-O arrive at the table naked and quivering. It can be flaked, cubed, whipped and combined with all sorts of things that transform it into an entirely acceptable dessert. The mind boggles at the variety of stuff than can be added to _pre- sweetened gelatin desserts - ginger ale, skim milk, orange juice, liqueur, nuts, and cream cheese are just a few. The Jell-O people have just published a veritable encyclopedia of things you can do with their product. For one dollar (sent to Jell-O, P.O. Box 514, Agincourt Ontario) they'll mail you a 24 page "book, complete with illustrations and in- from a banana nut ring with ginger topping to marzipan. There's a companion book on pudding ideas, which will be dealt with another day. Today, the Happy Cooker introduces you to two entries from the Jell- O idea book. We've tried the Raspberry Ice Cream Parfait, and it slid down our throats with a pleasant cooling effect. We're waiting for melon season to try the. Melon Bubble but it sounds like a pleasant way to finish off a sum- mer supper party. Strawberry Ice Cream Parfait 1 package (3 ounce) Jell- O Raspberry Powder 1 cup boiling water 12 cup cold water 1 cup vanilla ice cream 1 cup canned or fresh fruit. Hi Dissolve jelly powder in boiling water in an 8 or 9 inch square metal pan. Remove '2 cup and pour into a bowl. Add cold water to the jelly in the pan and place in freezer until it thickens - 10 to 15 minutes. Meanwhile, add 'ice cream to the reserved * jelly; structions for everything Spoon into MESSEnY dishes stir until smooth. Jello with imagination to half fill. Chill. Add fruit to slightly thickened jelly. Spoon onto ice cream layer. Chill for 30 minutes. This makes 4 servings. Melon Bubble 1 package (3 ounce) Jello Lemon powder 1 cup boiling water 1, cup Cointreau 1, cup cold water 1 cup melon balls 4 Dissolve jelly powder in boiling . water. Add liqueur and cold water. Chill f and 1/3 cups until HAS ARRIVED! thickened, and fold in melon balls. Pour- into serving bow! and chill until set but not firm Chill remaining 2. 3 cups jelly until -- slightly thickened. Then set bowl of jelly in a larger bowl of ice and water and whip until fluffy and thick, about double in volume. Pour over set jelly, chill until firm. Makes 6 servings.
