Asparagus Turkey Roll-Ups 1 can (10 0z/284 mL) Campbell's Condensed Cream of Chicken Soup 1/3 cup sour cream 75mL 1/2 cup milk 125 mL 2 tbsp drained capers 25mL 1 tbsp crumbled blue cheese 15mL 1/2 tsp Worcestershire sauce 2mL 6 slices cooked turkey breast 6 24 fresh asparagus spears, cooked (about | Ib/S00g) 24 paprika To make sauce: Combine first six ingredients ina | qt (1 L)saucepan; heat, stirring occasionally, until hot. Meanwhile, preheat oven to 400°F (200°C). Place 3 or 4 asparagus spears across narrow end of turkey slice; roll jelly-roll fashion. In shallow baking pan, place turkey rolls, seam side down; cover tightly with foil. Bake 15 minutes or until hot. To'serve, top each turkey roll with about 1/4 cup (50 mL) sauce. Garnish wih paprika, if desired. Serves 6. NOTE: 2 pkgs (10 02/284 g) frozen asparagus spears, cooked and drained may be substituted for fresh asparagus. Jack Miner's story (NC)--He is known as the father of conservation. He was a preacher, a teacher, a pioneer, a naturalist, and a missionary. He's been called a great salesman...even a huckster. Whatever his label, Jack Miner accomplished what no one had before. He was the first person to trace the migratory routes of waterfowl, and to establish a sanctuary for migrating Canadian geese, thereby altering their migration patterns. Jack Miner's story is told in TVOn- tario's presentation of Wild Goose Jack, Friday, October 28th at 7:00 p.m. EDT., from his modest roots in Ohio to his internationally known pioneering con- servation work in Kingsville, Ont. The program features recently discovered footage dating from 1915. Miner, who grew up without any formal education, but with an intense love of nature, overcame the tragedies of the deaths of his brother, baby daugh- ter, and young son, to embrace Christi- anity and the Bible. He immigrated to Canada as a young man, and settled in Kingsville, where he spent years observing the migratory pattern of Canadian geese.
