The Romans, who | always knew a good thing when they saw one and usually took it for their own, knew about this ex- Otic food frora their travels; but rice wasn't cultivated in Italy until the Middle Ages, and it took until the 16th century for stubbornly traditional French cooks to catch on to its wonderful diversity. Today almost everyone in the world eats it in one form or another, from the seductive saffron rice dishes of India to the reassuring rice puddings of Canada. Most of the rice consumed in Canada is grown in the Southern United States, and Uncle Ben's is the number one best-selling brand. There are some 7,000 different forms of this * adaptable grain, all of them a kind of grass called oryza sativa (with the exception of wild rice, which is from a different botanical fami- ly.) There's short, medium and long grain rice (which North Americans prefer) as well as round and flat top grains, and it comes in a positive rainbow of colors - ivory, red, white, dappl- ed black, brown and delicate violet favored in Fiji for sweet rice desserts. Whatever its shade or shape, 'rice is used interna- tionally as the base for a wide range of foods - Gre- cian stuffed vine leaves, Spanish paella, Polish pilaw, Italian risotto, Japanese sushi and Belgian rice tarts. Cornish Hens A La Wild Rice Spring is the perfect time for an easy to prepare delicious dish providing protein, complex car- bohydrates and glamor in a main course. 1 pkg Uncle Ben's Long Grain & Wild Rice 1 tbsp. butter or margarine 2 cups chicken broth 2 cups' fresh mushrooms, thinly sliced 1 cup celery, finely diced % cup .chopped green onions Y cup butter or margarine Y% cup sour cream 4(1 lb.) Rock Cornish Hens - thawed, rinsed and dried 2 tsp. salt Prepare rice with butter according to package direc- tions, but substitute chicken broth for water. Saute mushrooms, celery and onions in %4 cup but- ter. Add cooked rice and sour cream, mix well. Stuff Cornish Hens using 2 cup rice stuffing in each, then close openings with skewers. Arrange hens on a rack in shallow baking pan. Melt remaining butter and brush over -hens. Sprinkle with salt. Place remaining stuffing in foil packet. Bake hens at 350°F about 1% hours, or until tender. Place packet of stuffing in oven 30 minutes before end of bak- ing time and serve with hens. Serves 4. Golden Rice Fresh spring vegetables combine with Uncle Ben's Converted Rice in a dish with crunchy almonds and herbs. 1 cup Uncle Ben's Con- verted Brand Rice 3 medium carrots (about 2 pound) peeled and shredded 3 green onions with tops, sliced 2 tbsp. butter or margarine Y tsp. salt % cup toasted slivered almonds % tsp. dried dill weed Cook rice according to package directions, omit- ting butter, 20 minutes up to the point of removing from the heat. Add carrots, green onion, butter or margarine and salt, and stir. Cover and continue cooking over low heat un- til water is absorbed and carrots are just tender, about five minutes. Stir in almonds and dill weed. Serves 6. Apple Crumble Brown rice rings a change on one of Canada's favorite comfort foods, which seems to please children and adults alike. 1 cup Uncle Ben's Select Brown Rice 2% cups water 1 tbsp. butter or margarine 1 tsp. salt 3 cups apples, peeled and thinly sliced 1 tbsp. lemon juice, % cup brown sugar ¥% tsp. cinnamon % tsp. salt % cup flour % cup brown sugar ¥ cup butter or margarine % cup chopped almonds or walnuts Prepare rice in water with butter and salt accor- ding to package directions. Preheat oven to 350°F and butter a shallow baking dish, 8x8x2. Combine cooked rice, apples, lemon juice, sugar, cinnamon and salt; place in baking dish. For topping, mix flour and brown sugar together. Cut in butter with pastry blender or fork until mix- ture is crumbly. Stir in nuts. Sprinkle this mixture over rice-apple base. Bake at 350°F for 20-25 minutes. Serve warm, topped with whipped cream or ice cream, if desired. Serves 5-6.
