Mary Clare enjoys cook- ing, especially when her children were growing up but now tries not to spend too much time in the kit- chen so uses a lot of quick recipes, such as this casserole. She is very active, en- joys cross-country skiing, curling, and _ getting together with the bridge club every other Wednes- day, which is when the NEWS visited her. Mary Clare, along with Evelyn Falzetta and Kay Graham have been playing bridge together for 36 years. Other members have not been around so long, for granted." Chicken in Wine 2 pkgs. chicken thighs 6 tbsp. oil 2 cups mushrooms 1 can mushroom soup undiluted % cup chicken broth (oxo chicken flavoured) 2 cup orange juice ¥Y, cup dry white wine 1 tbsp. brown sugar sliced fresh ¥% tsp. salt 4 carrots, sliced Shake chicken in season- ed flour. Fry in oil until browned. Fry mushrooms in butter. Combine remain- ing ingredients in large casserole dish. Add chicken and mushrooms cook for 1 hour at 350 degrees.
