Page 8, Terrace Bay-Schreiber News, Wednesday, May 11, 1983 Hilda's Fixins Bean Pie I unbaked 9"' pie shell I cup sugar [1/2 cup white, 1/2 cup brown] 1/3 cup butter or marga- rine I cup cooked navy beans, pureed or mash- ed smooth 2 eggs 2/3 cup evaporated milk -- 2 tsps. cinnamon 2 tsps. cornstarch 2 drops yellow food colouring : 1/3 tsp. lemon extract 2/3 tsp. vanilla extract Cream butter and sugars, add cinnamon and cornstarch. Beat in one egg at a time, add beans and milk and blend until smooth. Blend in food colouring and flavouring. Pour in- to unbaked pie shell and bake in preheated 400 degree oven for 10 min- utes. Reduce heat to 350 deg., and bake 45 more minutes. Pie is done when tester inserted in center comes out clean. This tastes like a pecan pie.
