A reader writes: "On Father's Day, 1965, I de- cided that losing weight would be the best present I could give my husband. To make it 'for keeps' I resolved to change my food habits. I weighed 194 pounds.; Now, a year later, I weigh 154 pounds. My doctor is happy .. . we are all so happy. I am 51 and feel so much better now. I exercised regularly too. Thank God for better health and a better life. Thank you for your encouragement in my loss of 40 pounds." When pounds accumulate with birthdays, obviously your food habits need changing. So, when the doctor advises you to re- duce, make up your mind to switch from fattening fare to a pattern of eating which fur- nishes food nutrition but curbs calories. It's not really a diet, but a food pattern that emphasizes the protective foods and slights non-essential foods. On a crash diet the pounds come off fast, but they come right back on. Such diets keep you from facing up to the fact that you need to make a permanent change in your routine way of eating. INCLUDE PROTEINS The best pattern is to eat three regular meals a day. In- clude a high-value protein in all three meals. At breakfast have an egg and a slice of toast, or cereal with milk, or lean meat, plus fruit and coffee. At lunch; have cottage cheese (a half cup), or two ounces of lean meat, or a serving of fish, plus a salad or a vegetable, and skim milk. At dinner, include three to four ounces, cooked weight, of lean meat, fish or poultry. Include daily a green leafy or yellow vegetable, plus a second vegetable and a salad, if de- sired. When you choose a starchy vegetable, leave off the bread. Include daily a citrus fruit or juice, plus a second fruit, un- sweetened. Use non - nutritive sweeteners as desired. You also need a pint of skim milk or buttermilk a day. Limit bread to two to three slices and margarine or butter to two or three half pats, each one-quar- ter inch thick. Use one table- spoon of vegetable oil for cook- highlighted by a train edged in lace and enhanced by three lace rose appliques. COMPANY DESSERT For 8 to 10 guests, gently re- move the centre section of baked angel cake to within two inches of the outside edge and one inch from the bottom of cake. Fill this cavity with scoops of strawberry ice cream. Place cake in freezer. At serving time defrost about 15 minutes and serve with strawberries.
