If you don't finish a bottle at one sitting, cap it and put it in the; refrigerator to slow possible fermentation. You should drink) a low alcohol wine within seven days to 10 days. "Something like sherry which has a higher alcohol content you can keep almost indefinitely. The higher the alcoho! percent- age, the less the fermentation." KEEP WINE COOL If you want to decant a sherry or any other wine, you can do it in two ways. Use a serving basket which tilts the bottle on its side and allows sediment to collect in the angle at the bot- tom. Then pour it carefully If you want to use a decanter, just pour wine into it carefully to leave any sediment in the bottle. Mr. Stevens says Canadian wines are filtered to remove al- most all sediment. You should store wines in a cool, dry, dark place. Your base- ment may be | best in a house.
