'Invitation To Life' Is Theme For Beta Sigma Phi Season At the bi-monthly meeting of Gamma Epsilon Chapter held recently at the home of Mrs. Barry Hooper, Northbridge street, Mrs. Neil MacLean high- the evening with her presentation of plans for the spring rushing. She told the members that they should be using the phrase "Invitation to Life" many times during the en- suing weeks and asked them to pause and think about what it really meant. Mrs. Maclean commented that there must be two parties to an invitation; one who in- vites, and one who receives. Members of Beta Sigma Phi were in the happy position of being both, because they had at some time received this in- ' yitation to life and were now privileged to pass it on. Similarly, there were two an- swers to an invitation: accept- ance, and refusal. But in the case of an invitation to life, an invitation to living, it is unlike- ly that there could be a re- fusal! What does this all-em- bracing phrase mean? Simply an invitation to take hold of the best that life had to offer, to explore the riches of many minds, including one's own, to Do Not Freeze Eggs In Shells The Poultry Products Insti- tute has had numerous inquir- ies about freezing eggs. Some consumers wanted to know if the eggs could be frozen right in the shell. This is not satis- factory. First, the shells tend 'to crack and secondly, frozen egg yolk becomes gummy when not mixed with sugar or salt. One of these must be added for successful freezing of whole eggs and egg yolks. Ese whites may be frozen separately with- out adding either sugar or salt. To prepare eggs for freezing: Break eggs out of shell. For eggs to be used in main course dishes, add half a teaspoon of salt per cup of whole eggs. For use in baking and desserts, add half a tablespoon of sugar per cup of whole eggs. Mix thor- oughly with a fork. Package and freeze. Egg yolks -- Break all egg yolks. For egg yolks to be used in mayonnaise, add half a tea- spoon of salt to one quarter cup of yolks. For use in bak- ing and desserts, add one tea- spoon sugar per quarter cup of egg yolks. Mix thoroughly with a fork, package and freeze. Egg whites --- No mixing is required, package and freeze. NOTE: Use frozen food con- tainers such as wax or plastic cartons or glass sealers. Care must be taken with the latter to prevent breakage during storage. Eggs may be frozen in small ' experience the warmth of en- during friendships. In the motto of Beta Sigma Phi "Life, Learn- ing, Friendship', Life has pride of place, because without it there would be nothing else. As chairman of the rush com- mittee, Mrs. MacLean distribut- ed remembrances to the mem- bers and asked that they list the names of young women in the community who they felt would be interested in an or- ganization which unites culture and social events, which com- bined an opportunity for in- creasing friendships and doing something worthwhile, and which created an atmosphere for doing things together that one would not do alone. A membership in sorority enabled one to explore the many man- sions of the philosopher, the ar- tist, the historian, the archi- tect, the musician, the sculptor, the. writer, and the poet, through a cumulative study pro- gram. On behalf of the chapter Mrs. John Matthews, the presi- dent, thanked Mrs. MacLean for formulating ambitious plans for the spring rushing season. Mrs. Ray Crossley, the speak- er for the evening, spoke on the subject, "Tools for the Art of Living -- Speech.' Mrs. Cross- ley began her talk by tracing the origin of speech from the caveman's crude drawings on the walls of caves to the pres- ent. It was announced that the next meeting was scheduled to be held at. the home of Mrs. Ronald McEachern, Northview Street, on February 23. The program for the evening would be presented by Mrs. Murray Fraser, whose topic will be "Tools for the Art of Living-- Action," quantities freezing two, three or four egg yolks, whites or whole eggs in smaller contain- ers.
