Mrs. Scott displayed a scrap-book showing Myriad Details A lot has been said about the homemaker not organizing her work efficiently and being }wasteful of her time and ener- gies. Well let's show these crit- ies that when we put our mind to it we can organize our work -|as well as the next person. Here are some suggestions which may start you thinking about how you can organize your Christmas dinner so that you 'won't be too exhausted to enjoy lyourself too. Write out your Christmas menu and from it compile two shopping lists, one for the non- perishable and one for the per- ishable foods, SHOP EARLY Shop a week in advance for the first list and as far ahead as your, refrigeration or storage facilities will allow, for the perishable foods. Make a list of the items which can be prepared several days before Christmas, such as cran- berry sauce or jelly, pastry for the, mince pie, salad dressing, etc. Make a list of things which can be made the day before Christmas. Under this heading 'would also come those jobs which can be done in advance such as assembling the extra dishes, silver and linen. Set the table and arrange the table dec- orations (except the flowers) Christmas eve and cover it with a clean cloth. Serve breakfast buffet style Christmas morning and let everyone help himself and sit where he wants. Most of the family will probably head for a seat near the Christmas tree. THE CHRISTMAS BIRD The chances are turkey will be the main feature on the menu, either one of the "king- sized" birds or one of the "'little brothers," the small, young turkey, which are generally available this Christmas. If tur- key is not on your menu then it will probably be goose, chicken Start With Notes To Organize Of Christmas or duck that you will feature. If any event Poultry Products Institute of Canada suggests that you prepare the dry in- gredients for the stuffing the day before Christmas, that is the bread crumbs and season- ing. You should also singe the drawn poultry, remove pin feathers and wash the bird thor- oughly either by letting a stream of cold water run through the body cavity or by wiping inside and out with a clean damp cloth. Dry well, wrap loosely in waxed paper and store in the refrigerator or other cold place. Then on Christ- mas morning it is only a mat- ter of minutes to complete the stuffing, fill and truss the bird, cover it with fat moistened clean thin cloth and pop it into a slow oven. Clean the vegetables the day before and get them ready for peeling and last minute prepar- ations. Wash salad greens and in the refrigerator or other cool spot. If celery and carrot curls are on the menu prepare them and store in a screw top sealer wrap in waxed paper and store| also in a cool place. Don't soak them in water, the water that clings to them after washing will keep them fresh and crisp. LITTLE EXTRAS Candy and nut dishes can be filled, covered with waxed paper and, of course, stored out of reach of "nibblers." : Many pudding sauces, if you are planning on s steam- ed pudding instead of mince pie, may be made ahead of time and reheated over hot water before serving. These are just a few hints for onganizing your Christmas din- can think of many more. Work out a plan and save your ener- gies. You will enjoy yourself more if you are fresh and un- hurried on the big day, and will, we hope, have a very Merry Christmas. Ronald W. Bilsky,v.c.
