November calls)2 for hearty main dishes to match stepped up appetites..One such dish is a homespun casserole of French Canadian origin, Cocotte de Chez Nous, Beneath its crisp, crumo crust this casserole contains cooked or canned fish in a creamy sauce laced through with color- ful vegetables. It's a simple dish to prepare and can be made using any variety of cooked or canned fish you choose. According to the hame economists of the Department of Fisheries of Canada who sup- plied the recipe, cooked cod fil- lets are an excellent as well as economical choice. COTTE DE CHEZ NOUS. pound (2 cups) cooked or canned fish can (20 ounces) mixed vege- tables 4 hard cooked eggs Y% pound butter or margarine ¥% cup flour 1 teaspoon galt Y, teaspoon pepper 3 cups liquid (vegetabie) juice Plus milk to make volume) 2 cups soft bread crumbs Chez Nous tablespoons melted butter Flake fish. Drain vegetables. reserve vegetable juice and if any juices are obtained from fish, add them to it. Slice eggs. Melt butter or margarine and stir in flour and seasonings. Gradually add vegetable juice combined with enough milk to make three cups of liquid, Cook and stir until thickened, Com- bine fish with one cup of sauce. Spoon into a greased two-quart casserole. Combine eggs with one cup of sauce and spread over fish layer. Mix vegetables with remaining sauce. Spoon over egg layer. Top with com- 'bined bread crumbs and melted butter. Bake in a moderate oven (350 degrees F.) for about 30 minutes, or until sauce bubbles and crumbs are browned, Makes 6 servings.
