SOA THE OSHAWA TIMES, Fridey, July 31, 1964 A teeny Viennese reat Ice Cream Meringue Torte WHAT is the difference be- | tween a cake and a torte? Both belong to the gencral family of cakes; but instead of being made with flour, tortes are often made with fine- chopped nutmeats and fine dry crumbs of some type folded into a meringue base, and baked in layers. These are put together with special fillings. Ice _ Cream Peacan Torte Viennese, served with chocolate - gauce, is de luxe. Measurements are Ievl ICE CREAM' PECAN MERINGUE TORTE VIENNESE 3. egg whites ¥% tsp. salt 1% c. sifted confectioners' sugar 1% c. fine-crushed shortbread cookie crumbs 1c. fine-chopped pecans 2 squares semi-sweet chocolate, chopped % tsp. vanilla 1 qt. pistachio ice cream, softened Chocolate Sauce (homemade or bought) Beat egg whites and salt un- til foamy throughout. Gradual- ly add sugar, beating about 10 min. or until stiff shiny peaks are formed. Stir in crumbs, pecans, choco- late and vanilla. Line large baking sheet with smooth brown paper. Draw two 8" circles on this; rub lightly with oil. Divide meringue in 2 circles, spreading evenly so edges are same thickness as centres. Bake 18 te 20 min. in mod oven (350 degrees F ). Par'ly cool on rack. While stili slighty warm, carefully loosen edges of meringues with spatula. Leave on paper until thoroughly cool- ed. To assemble torte. remove meringue layer from paper. Set on large serving plate- Spread over half of softened ice cream. tTop with second meringue layer. Spoon remaining ice cream on top. Freeze 3 hrs. or until firm. Serve with choco- late sauce. Serves 16 to 12. Chocolate Sauce: Combin2 4 squares semi-sweet chocolate and 6 tbsp. water in saucepan. Place over low heat; stir until smooth. Add % ec. granulated sugar; stir. until dissolved.
