The mix-made cakes save a few minutes' time in measuring, putting together and the wash- ing of two or three cooking utensils, However, many mixes eost more than the ingredients needed in making standard cakes. Most mix-made cakes are sweeter and become dry much sooner. Here are. some personalized variations: Cinnamon - Toasted Cup Cakes: Prepare yellow or white cake mix following pkg. direc- tions, baking in cupcake panis (number depends on pan size). Before baking, dust with 2% thsp. sugar mixed with 14 tsp. ground cinnamon. Serve warm. Lemon Spice Cake: Prepare yellow cake mix by pkg. direc- tions, beating into batter % tsp. ground cinnamon, % tsp. each packaged lemon pie filling. Dust with confectioners'. sugar. Fresh Swedish Apple Cake: Prepare Sugar-Maple Cake fol- lowing pkg. directions, adding ¥% tsp. ground cardamom and using only ic. water. By hand, fold 1 ¢. coarse-chopped peeled tart apple into batter. Bake in oiled and fioured 8x8x2" pan. Peanut-Butter Cake: Make up Sugar - M a ple Cake following pkg. directions, adding % c. chunk-style _peanut butter with eggs and water, Put together and top with plain chocolate icing, immediaely stre wing 1/3 c..coarsé-chopped (unsalted) roasted peanuts over top. Nut Cake: Fold % ec. fine- chopped toasted nutmeats (any kind) inte the cake batter. Bake as directed. Put together with raspberry jam and finish with whinpned topping.
