MINT GLAZED ROAST LAMB to 6 lb. leg of lamb | teasgoon rosemary. 1% teaspoon salt 14 teaspoon pepper % cup mint jelly ¥% cup firmly packed, brown sugar or 8 medium potatoes, peeled Roasting time is based on temperature of the lamb when it is taken from the refrigera- tor, completely thawed. Wipe the meat with a clean, damp cloth; make several slits in the top fat; sprinkle with rosemary and rub into the cut surface; place fat side up; ona rack in shallow roasting pan. Do not cover or add liquid, Insert meat thermometer, if be- ing used, in centre of roast so that tip is not touching fat or bone. Roast until thermometer registers 170 degrees for medi- um or 180 degrees for well done. Allow 22 to 30 minutes per pound.
