Crush in heavy pot with potato masher. Heat until juice appears, cover, simmer 15 minutes. Place in jelly bag, squeeze out juice, freeze for later use or put 3 cups full in pot. Add lemon juice and sugar. Mix well. Stir constantly over high heat to boil. Pour and stir in Certo to full hard boil for one minute. Remove from heat, skim foam with metal spoon. Pour into 10/11 medium glasses. Top with 1/8 inch hot paraffin: Tomato Marmalade 1 lemon. 5-7 medium tomatoes : 1 box (1 1/4 oz.) powdered pectin 4 1/2 cups white sugar 2 tablespoons chopped preserved ginger (or dry to taste) 5 half-pint jars sterlized. Method: Cut lemon rind (velidte only) into slices. Simmer in water to-cover 15 minutes, drain. Scald tomatoes, peel and chop to equal 5 cups full. Remove and discard seeds and white membrane from lemon. Combine tomatoes, lemon rind and pulp in pot. Cover and bring to boil. Lower heat. Simmer ten minutes. Measure, add water to make 4 cups if necessary. Return to pot and add pectin. Return to high heat. When boiling hand-stir in sugar and ginger. Boil hard again for one minute. Remove from heat. Skim off foam with metal spoon. Continue skimming and stirring for 7 minutes to prevent fruit from floating. Fill jars to 1/2 inch of tops. Wipe rims. Seal jars. Invert 5 minutes. Turn upright. Let stand 30 minutes. Shake gently. Label and store in cool, dry place. So, combine the garden's bounty and the friendly freezer and enjoy! A.
