The Telegram's story tells of the thousands of dollars spent by Brown on his parties in Toronto. Parboil the potatoes in salted let or chop that is to be' breaded, dip each chop or neat piece of cutlet THE STRATFORD MIRROR As Days Go By The "crash," which fas struck this city with its great furry and which became public through the press on Wednesday last, is the greatest one that has ever hurled itself upon Strat- ford. As the days pass the amount of money which Tom Brown is al- leged to have swindled Stratford citizens of, leaps, and now nears the quarter of a million dollar mark. Tom Brown, it is alleged has swin- dled many, of their life savings and as his victims he picked on such people as helpless widows, and other life-long residents, to whom estates had been handed down. These trusted him and allowed him to handle ev-| erything they had. The greatest loss to one party is $42,500 and a score or more of others have lost from -$10,000 to $17,000 each. It was on Monday noon that the complaint was laid to authorities and a warrant, charging him with the theft of $3000 in bonds was sworn out. Little dreamed this city that this sum would mount by tens of thous- ands and reach nearly the quarter of a million mark. The two officials of the Attorney- General's department, Inspector W. H. Stringer and Joseph Sedgewick have handled the situation in a very ereditable manner since their arrival here. There has been rumors circulating that Tom Brown cannot be brought out of a certain country, if caught, but this is not true, according to the officials from Toronto who are here. The main questions in the minds of Stratford people are, when will he be caught? Will it help straighten out the muddle that he is alleged to have thrown this city into? FOR YOUR COOK BOOK TO SERVE WITH CHOPS Red Currant jelly is a classical ac | companiment for lamb chops just as. it is for roast lamb. It is also de- licious with veal. Mint jelly is perfection with lamb. Have you thought of making it with commercial peétin as a base, adding a4 little green color paste or liquid? Apple slices act as an interesting garnish to pork chops, as well as re- place the more usual apple sauce in its practical usefulness. Select tart cooking-apples with réd skins, core them without peeling and cut in half- inch slices. Saute these until tender and arrange one on each pork chop! or place them around the dish as a border. Apple sauce sholud be made early and thoroughly chilled, to do _ full justice to the pork chops. 'Prunes, large meaty ones, which have been soaked and then cooked until tender, are good with lamb or pork. Sweet potatoes have a well declar- ed affinity for chops of almost any water, split _them lengthwise and saute them or finish in a dripping pan in the oven, basting well with fat.. Breaded Chops--Lamb or Veal The wise housekeeper keeps on hand a covered jar of very fine dry crumbs for such purposes as coat- ing chops or making scallops. A cut- should not, in my opinion, be cut too thick. Beat an egg very slightly, dilute with a tablespoonful of water; in the fine crumbs to give a dry sur- face to hold the egg; dip in the egg, then coat well in the crumbs, which, by the way, shoud be seasoned with salt and pepper. Deep frying is an excellent method for cooking these coated chops. Arrange them in a frying basket, lower into deep hot fai, and when cooked, drain on crumpled absorbent paper. Another method is to heat a shallow roasting pan and plenty of dripping in the oven, put in the breaded chops-- resting them on a trivet if possible-- and cook in a hot oven, turning the chops to brown them evenly. If the pan is large enough, you can finish sweet potatoes, as suggested above, right in the pan with the chops; or use small, parboiled white potatoes, finishing them in the fat in the pan, when they are known as franconia potatoes.
