You can buy a twenty-pound pail of Montmorency cherries, pitted and ready to use. They're packed with a 10% sugar syrup --2 pounds of sugar to 20 pounds of cherrie§. The fresh cherries, after they are pitted and sugared, aré kept chilled until used.
