Puddings PINEAPPLE CREAM 1 small tin of pineapple 1 oz. butter 1 oz sugar 1 oz flour 3; pint milk and pineapple juice mixed 2 eggs Make a white coating sauce with flour, butter and liquid. When thickened add beaten egg yolks and reheat gently until the eggs have cooked. Add sugar and fine- ly chopped pineapple. Cook slight- ly. Pour into pie-dish. Beat egg whites stiffly, fold in 2 ozs. 'sugar and pile on top, Bake in a hot oven until meringue is set and slightly brown, This pudding can be served hot in winter, cold in summer. Cover and let rise in warm place until dough is light -- about 1% to 2 hours. Cream butter' and beat in % cuv white sugar. Beat till light and fluffy. Add % tsp. salt, mix well. Add yeast mixture and 3 well-beaten eggs, mix well again. Stir in rind of % lemon, one- eighth tsp. mace and 2 more euvs of sifted flour. Mixing well, add 1 cun seedless raisins. sprinkled with a little flour. Add more flour if necessary to make quite a soft dough. (Add flour sparingly). Turn into greased 11 inch tube pan (Angel food pan) and let rise until doubled in bulk. Bake in moderate oven (375 deg. for 20 minutes then reduce heat to 350 deg. and continue baking until done. about 45-50 min. Turn out on rack and cool slightly, then frost with thin confectioners. frosting and decorate with red and green cherries. Delicious served with grape or lemon mar- malade. Mrs. J. CHERRY LOAF cup white sugar tbsp. butter egg : small bottle of maraschino cherries cups all-purpose flour tsps. baking powder tsp. salt /~ 1% cup nuts oz. cup of liquid (cherries juice and milk) Method: Beat sugar, butter, egg until smooth. Add liquid, add flavoring then add dry ingredi- ents. Add drained cherries and nuts. Line loaf pan with waxed paper. Bake in 350 oven for ene hour. Add shortening, pine- apple and vanilla. Mix and beat for two minutes. Add eggs, beat- en and juice and beat 2 min. more. Add dates and bake in loaf pan at 350 deg. for one hour or more.
