14 THE OSHAWA TIMES, Tuesday, June 28, 1960 Cookies CRISP ALMOND DIAMONDS The aroma of these ecrisp, nut-filled cookies will bring the whole family to the kitchen to cast hungry, hopeful eyes in CRISP ALMOND DIAMONDS 84 cup margarine 34 cup sugar 1 egg. slightly beaten 1 tsp. almond extract 134 cups flour 3% cup finely chopped almonds Cream margarine and sugar. the direction of this senior- junior chef combination. We'll plead in their favor and sug- gest you be generous! Blend in egg and almond extract. Add flour and nuts; mix well, Chill. Roll dough thin and cut with a diamond shape cutter. Place on ungreased baking sheets. Bake in a moderate oven, 375 degrees, 5 to 7 minutes. Six dozen cookies. COCONUT SQUARES Cream 2 tbsps. butter 1% cup white sugar 1% cup milk 1 egg 1 cup sifted flour 2 tsps. baking powder Pinch salt Add dry ingredients to cream- ed mixture. Put in 8 x 8 pan and bake in 350 degree oven for 20 minutes. Take from oven and cover with following topping: 1 cup coconut 34 cup brown sugar 8 tbsps. melted butter 2 thsps. cream Spread on cake and brown in oven. WALNUT SQUARES 1st Mixture Blend 1 cup flour with % cup butter and 1 tbsp. brown sugar. Pack in 8 x 8 pan and bake 5 minutes at 350 degrees. 2nd Mixture 2 eggs 1 cup brown sugar 1% cup chopped walnuts 1 cup coconut Y; cup maraschino cherries 1% tsp. vanilla. Beat eggs, add brown sugar, flour, and salt mixed together. Add vanilla. Lastly add walnuts, coconut and cherries. Pour this mixture over first mixture and bake about 35 minutes at 350 de- grees. COCONUT DREAM SQUARES 1% cups sifted cake flour 1% cups brown sugar, firmly packed Yacup butter 2 eggs, unbeaten two-thirds teaspoon single- acting or % tsp. double act- ing baking powder 1 tsp. vanilla 1 and one-third cups flaked coconut 1 cup wanuts, chopped Method: Sift together 1 cup of flour and % cup of the sugar. With pastry cutter or two knives cut in butter until mixture is the consistency of corn meal. Pat into an ungreased 9 x 9 x 2 pan. Bake in moderate oven 350 deg. for 15 min. Beat eggs in medium bowl until light, add remaining sugar gradually beating constant- ly with rotary beater until mix- ture is light. Sift remaining %- cup flour and baking powder to- gether onto sheet wax paper, then fold into egg mixture. Add vanilla, coconut and nuts, mix thoroughly. Spread on top of warm mixture in pan and return to oven. Bake in moderate oven 20 minutes longer until lightly browned. Yield about two dozen 1%" squares, Mrs. B. D. Hitchens, 6th Scout Mother's Group NUT ROLL TUTTI FRUITI (No cooking) 11% cups graham cracker crumbs 3 cup candied fruit 1% cup marshmallows, cut fine Y cup maraschino cherries, cut small cup nut meats 14 tsp. nutmeg Y tsp. cinnamon 1 tsp. vanilla 1% cup thin cream Mix all ingredients well and roll in wax paper. Shape in small balls about the size of quarter, sit on baking sheet and press centre with thumb decorate with red - and green cherry pieces or walnuts. Bake at 350 deg. for 12 mins; makes 5 doz. POPPY SEED COOX!ES If poppy seed is your weakness, you will find these cookies de- lightful. 1 cup butter 1 cup sugar . 2 eggs, well beaten 2 tbsps. sour cream 23% cups sifted flour ¥% tsp. baking Few grains salt % cup poppy seed Cream the butter; add the su- gar and beat until light. Blend in the eggs and sour cream. Sift the flour with the baking soda and salt, then mix in the poppy seed. Add to the first mixiure and combine thoroughly. Chill the dough for easier handling. Roll the dough thin and cut with a floured cookie cutter, Place on a greased baking sheet and bake m a moderate oven (375 deg.) until delicately browned.
