La we 2- PORT PERRY STAR - Tuesday, July 6, 1999 "Scugog's Community Newspaper of Choice" Big Bike in town Thursday to raise funds for Heart, Stroke Foundation It's not every day you see a J30-seat, one-ton cycle moving down the street, but on Thursday, July 8 you can expect to. As part of the Heart and Stroke Foundation of Ontario's sixth annual "Big Bike for Stroke" event, eight teams (repre- senting various compa- nies) will be riding through Port Perry's downtown core to raise funds for stroke research. The goal is to have 29 riders per team with each member of the team rais- ing a minimum of $50 in pledges. Prizes for fundraising vary from caps to watches, depend- ing on the amount raised by each member. The fundraising goal for Port Perry is $12,000. With the public acting as each team's personal cheering squad, riders will be given the extra motivation to have fun as they peddle. NUTRITION PROS, 5 cups of berries terrific recipe. The berries mentioned are all nutritious because they are sources of antioxidants, vitamins A, C and Folate. Here is a dessert recipe that uses a variety of these berries, is low in fat and tastes great. Summer Pudding 1 loaf of white bread with the crusts removed 1/4 to 1/3 cups of sugar Grease a 9 by 5 inch loaf pan. Line pan with slices of bread. Simmer berries and sugar briefly to soften berries. (If necessary thicken berry mixture with cornstrach.) Pour berries into the loaf pan. Top with a layer of bread slices. Place in the refrigerator with wax paper on top. Place a weight on top. The weight should be heavy enough to allow the bread to absorb the fruit juice but not cause the pudding to overflow. Refrigerate for 24 hours. Remove the weight. Invert the pudding on a platter. Serve with frozen yogurt. Whipping cream is also a nice accompaniment.
